Mostly because the xanthan gum that is used in commercial products is made from GMO corn. When I use it in my own mixes etc, I use organic xanthan gum that comes from organic corn which is not GMO. Commercial thickeners are only put there to make the end product more appealing to the user. They are not always necessary . This is thickened by using flour and butter. It is a more pure product. Thats all.

I don't know. I don't live in Florida. The powdered milk I used in this recipe was Whole Powdered Milk called NIDO. It can usually be found in the Latin food section of the grocery store. I have two large cans I got on clearance at Walmart that need to be used. Hope that helps.

I love this! My daughter is allergic to MSG so I have not been able to make any of our old recipes that call for cream of chemical soup for the last 15 years. I can now pull out some old favorites and add some more variety to our dinner selection. Thank you so much!
Thank you for your comment. As you can see, I had no problem achieving the "condensed" soup thickness that I desired by using the Magic Mix. I prefer not to use cornstarch for a couple of reasons. The first of which is because it is a derivative of GMO corn. Even if the label says "organic" there is no guarantee it is GMO free. Secondly, when using cornstarch the "leftovers" congeal into an unappealing mass that is difficult to reheat because the starch breaks down too easily.. Thanks.
Thanks for this....my husband has to watch his sodium and we no longer buy the soups because of his heart issue. They are loaded up with it. I have been looking for alternatives and this is excellent.

A great way to thicken a sauce is to take a little bit of cornstarch and mix it with water then put it into your sauce and bring it to a boil. works perfectly and remember a little will go a long way compared to thickening with flour

Noreen, when you say butter is perishable, to refrigerate....I'm confused because another you tuber was canning butter for the shelf...does canning it make it non-perishable??? Wendy
I don't really use that and in fact have never used cream of shrimp soup. However if you are looking to make cream of shrimp soup using Magic Mix, you can just mix up this soup without the broccoli, add a can of baby shrimp along with the juice and include at least a teaspoon of Old Bay or seafood seasoning. That would be where I would start. What would make it really great is if you started with shrimp stock instead of water. Then you would need to buy head on shrimp and peel and pop the heads off and then make a stock from that to make your cream of shrimp soup. Hope that helps.

I am hoping you can help me a bit - are you able to find the non-instant milk powder in the regular grocery? I live in OH so I know our grocery store options will be different with the exception of Walmart. I never realized there was non-instant milk powder - I have used instant milk powder in many applications but it's even hard to find as well. I remember the day when it came in a really large box and my Mom used to buy it and make the instant cocoa mix. Thanks for your help.
