Because it fits his voice. If you Capo 2nd fret and play Key of G, you are in the Key of A. You should always play the song to make it possible for you to sing.
That is just personal taste. Mostly it's because it is very comfortable to play G C D Em, because you dont have to move your fingers a lot and can do a lot of variations (D2, D4 etc.), while playing A D E F#m requires movement around the neck. Sometimes you can focus more on your singing when you dont have to focus to move your hands so much etc. Transitions to other Keys are also easier with a capo. Musically it doenst matter if you play G with Capo 2 or A. Just some minor reasons, personal taste. Buuuut, sometimes it is really cool to play a song without a capo, just for the sound (Hosanna for example).

Im really early but its Em and fingerpick from the A string to B string. So first A, then D, then G, and lastly the B string.

no you don't. You can just go to the frets 1,2&3 instead of 5,6&7… use the same chord changes.
