I'm a professional chef by degree, and can adamantly affirm that caramelization does not result in the creation of caramel.
Caramel itself is indeed made through caramelization, as a result of boiling brown sugar in water - this is considered a confection, or in other words: candy.
Caramelizing onions however does not involve boiling sugar, but rather cooking the onions in a pan of oil - which brings out their natural sugar content (At no point is this sugar exchanged into caramel's chemical consistency.) Caramelized onions, are not a confection as they do not have caramel nor are they made of it.
I can go further in depth if need be.
