    Recipe :
    Halwai Style Mix Veg Sabzi
    Preparation Time: 20 minutes
    Cooking Time: 20 minutes
    Serves: 3-4
    Ingredients:
    1 medium cauliflower
    250g baby potatoes
    3 carrots
    250g beans
    1 capsicum
    1 large onion
    200g paneer
    ½ cup shelled peas
    4 large tomatoes
    2-3 green chilies
    2” ginger
    1 tbsp coriander powder
    1 tsp cumin powder
    1 tbsp Kashmiri red chili powder
    1 tsp turmeric powder
    1 tsp garam masala powder
    Salt to taste
    Oil to fry
    2 bay leaves
    1 tsp caraway seeds
    7-8 cloves
    2 tbsp tomato ketchup
    1 tbsp green chili sauce
    1 tbsp Kasuri methi
    Chopped coriander leaves
    Method:
    Scrub baby potatoes well and cut into halves. Remove the cauliflower into florets. Cut beans into 1” pieces. Peel and cut carrots into ½” thick slices. Cut paneer into 1” cubes.
    Cut capsicum and onion into 1” dices.
    Mix the powdered spices in a bowl with 1 cup water.
    Crush the ginger and chilies into a paste. Roughly chop the tomatoes and blend into a paste.
    Heat oil in a pan. Fry the vegetables one by one and remove to a plate.
    Heat 2 tbsp oil in a pan. Add the whole spices and allow to splutter. Add the ginger chili paste and cook till fragrant. Add the spice paste and cook till the masala is fragrant and oil floats on th top. Add the tomato puree and cook till again the oil floats on the top. Add salt to taste, green chili sauce and ketchup and mix well.
    Add fried vegetables and mix well. Cook for 3-4 minutes to allow the vegetables to absorb all flavours. Finally finish with crushed kasuri methi and remove from heat. Garnish with chopped coriander leaves and serve.
