Thank you for mentioning the 50th Anniversary badge on the hood and trunk of all 2003s. I have a convertible that not one but TWO "know it alls" accused me of putting on to fake that it is a limited edition or something special. (Aren't all Corvettes something special?) Oh, one stat that may be significant is that there were MORE convertibles built in 2003 than there were hardtops. Ideally I attribute this to the earlier years of the C5 proving how well this car handles the wind when driving. ALL convertibles will have air buffeting/roiling over the windshield, but the C5's low drag coefficient due to the shape of the back of the passenger compartment (rounded behind the seats) along with the air being forced into a "tunnel" (you have to watch wind tunnel videos) that is created by the rear quarters rounded at the height and angle they are proved that at highway speeds the car is still comfortable and 'won't rip your hat off'. If you wish to take the convertible into the 150mph+ range, you will probably want to leave the top down but put the side windows up. Admittedly, the buffeting at this point is strong and loud but still better than any other car or motorcycle I've ever run. Oh! There is one other change of note: In 2001 Chevy began putting the LS6 intake on the LS1 engine for a net gain of 5HP and 1-2mpg(depending on your driving). But if you have a pre-01 C5, look into the LS6 intake upgrade. It's probably the first upgrade I would do as it will remain compatible through all motor mods short of a blower.
