This was made from the rendering water. Basically you put the wax cappings that have a lot of honey trapped in them in water and boil the water to melt the wax, the propolis in the wax also melts and releases tannins into the water/honey mixture, you can also get some caramelization of the honey on the bottom of the pot if you don't stir it. Both darken the mixture. You can have a pale honey and a dark mead as a result if you use rendering water.
Raisins and sultanas are COATED IN OIL to prevent them from sticking together like a brick. Use oil free raisins/sultanas if you want a clearer better result. Or just buy some yeast nutrient from a brew shop.
To get the labels off your bottles stick'em in a container (or drum), top up with water and let them soak for a week in weak sterilizer. Most of the labels will float off themselves while other may need a bit of persuasion. I used one of those cheap plastic storage boxes from the reject shop. Happy days fellow piss pot 🤣🤣🤣
I hate sweet mead, though a slight hint of sweetness does add some backbone. I ferment mine dry just out of preference. As a beekeeper I have plenty of spare honey around. Old stock that's crystalized and pasteurized stuff from rendering.
The color of mead is dependant on the color of your honey. The darker the honey - the darker your mead will be. Cheers! - Tama

I have made a few meads, I back sweeting them. Its just way to dry if you dont.
