    Great informational video regarding the use and maintenance of a food PH meter and how to avoid cheap knockoffs. I was victim of that on Amazon. I’m very interested in obtaining the green open bulb made by Harris Scientific. What is the model number and website that you purchased yours from? Thanks again for sharing a great video.

      Tomorrow when I go to the kitchen, I will check the model number. HARRIS SCIENTIFIC does not sell on the web. I am lucky to have a supplier in Birmingham, England that ships to me every month. He is more than willing to travel the several blocks over to Harris to by me items and take them to the post service there. If you are seriously interested, i will see what the cost of a single unit is and would be happy to secure it for you. I have an EU import certificate, so I pay no duty.

    Great and informative video. I am just now venturing into hot sauce making on a personal scale for friends and family, but admittedly some day might consider branching into small scale sales at craft venues, etc. Your video cleared up a lot of confusion as to the type of tester I needed. I already own a Apera PH20 and was planning to use it until I saw your video and understood its shortcomings in regard to hot sauce testing. Like the other reader I have searched all for info about the Harris Scientific. After reading your latest post I now understand that it is not sold here in the US. I am curious to know how much it costs? At this point it looks like my most economical choice for a quality tester is going to be the Apera PH60S. It would be great to hear if you have any thoughts on this tester or similar, quality open probe testers.

      I think that Apera PH60S is a good meter, but clearly more expensive than it needs to be.
      I have recently sourced the exact same meter as the Harris, coming to me directly from the manufacturer. I have just placed an order because I need an extra and I need one from a friend in North Carolina. I had to order 6 of them, so I will have some extras for sale. I "think" my final landed cost, including shipping, will be about $77 per unit. I will be looking to sell the 4 extras. I think they will arrive late in December or early January.       @@MrPhilsAlabamaHotSauce I tend to agree that the 60S is over priced but looks to be the only suitable meter on this side of the pond. I would be very much interested in one of the extra Harris units you are going to have on hand. I plan to make a small batch of sauce as gifts for Christmas and maybe I can use PH strips while waiting to get the meter. Regarding the Harris meter, is the probe replaceable? In my research I have read that most probes need to be replaced over time and use as they have a basic shelf life. What are your thoughts on this? If you take good care of the unit and probe with proper cleaning and maintenance is there a need to replace the probe or is it more cost effective to buy a complete new unit?
      The probe on the PH60S is replaceable, but yet again it is way over priced at $115

      @stand3692 The probes are replacable, and I keep several extras on hand. I have never had to replace one because I am extrodinarily anal on cleaning and care. However, an accidental drop is all that is needed to damage a tip. To be honest, the replacement cost of Apeara probes is absurd.     Phil how much acid is normally in your hot sauce? Are all hot sauce acid? Do you measure evetybottle?

      @@TommyBarnes-yx5xb Hey Tommy. Most of my hot sauces have a pH in the range of 2.9 to 3.8. Those levels are fairly high acid. The acid is important to ensure that the sauces are shelf-stable, taste great, and are safe. Regardless of the manufacturer, almost all sauces are high acid.
      We do not need to test every bottle, but every batch I produce is subjected to a number of pH test, along with other quality inspections.

      Hi Erin. The pH meter is the device we use to measure how acid the sauce is. This is a measure of taste and shelf stability of the sauce. You do not need to worry about this measurement. Just feel safe knowing we are checking everything to make our products safe and delicious. Thank you.
