      @Mary's Nest hello from Tennessee!! Our Aldi's stores have been out of organic ketchup so I decided to follow your recipe. As I only had a 28 oz can of tomato paste, I doubled all the other ingredients. I made it on April 5th. This morning, I noticed activity, bubbling. How long should I continue to ferment it (with it being tomato product wondering about food safety.) Thanks! I love your channel. I'm waaaaay behind on stocking a prepper pantry.     My son has been on me about making some more fermented ketchup. I have tried a few different recipes, and this is hands down the best. I didn't have ground clove so
    I used a little allspice and cinnamon. I also used coconut sugar and a little honey. I am so happy with this recipe and can't wait for it to ferment and try it again. I asked my husband if it was missing something, and he said yeah... Fries. lol He didn't care for the last recipes either. I made this recipe times 4 and made two large mason jars full. I know my son is going to be so happy when he gets home from work.... Thank you so much for sharing this amazing, fermented ketchup recipe. This is going to be my new go-to.

    Love to see how you make tomato paste. My sister hangs hers in a jelly bag to avoid having to cook it as long, and then uses the 'tomato water' in other things. Really enjoyed the ketchup vid!

      Marta Aberg - Hi Marta!! Oh my goodness!! That is what my grandmother and mother did. I grew up eating rice made in “tomato water” with Parmesan Cheese grated on top. Years later, I saw Nigella Lawson make something similar for her children but she used tomato sauce thinned with water. She called it something cute like the busy mother’s tea time snack! I do not have videos yet on making tomato paste (and yes it can be made from tomato sauce or fresh tomatoes) but I will definitely do that.     Thanks, I made this today. I used some whey I strained from some probiotic yogurt (stonyfield). It's sitting on the counter covered in a thick layer of cheesecloth. Gave it a taste and it was pretty. Definitely different than Heinz. Kind of reminds me of primal kitchen.
    Can't wait to try it in 3 days or so..

      Mary's Nest Yes I am on your Facebook group and love how helpful everyone is there. I grew up eating home cooked meals and now as an adult after not eating very healthy, I’m craving good healthy wholesome foods that are not only nourishing the body but also your gut health. I’ve made some chicken bone broth, beef bone broth and I made the tallow lotion and let me say that stuff is Amazing!!     Thanks a lot for all your hard work, educating in cooking the TRADITION WAY, right now i have two breads that are cooking from your recipes, i've done them before and they allways come out very very good, and very nice looking. Right now I have watching the recipe for Simple Fermented Ketchup Recipe That Tastes Like Store Bought, and you mentionned if we wanted a recipe for the tomato paste to let you know, well I am letting you know cause I do have a recipe but I would really like to have your knowledge on your recipe. I am sorry to say I still have 125 lbs of tomatoes that I froze from my garden in October/2020. So now before I start my big garden I would like to make tomato paste our of those tomatoes, Allways a pleasure to listen to your videos and you are so calm explaining all the steps, thanks. Ferments can be unpredictable in terms of their refrigerator life. But this ketchup can last 2-3 months or maybe longer. If the color browns, or develops a bad smell, or worse...mold...discard it.     I ferment everything I can. Definitely use honey it helps with ferments. Pretty good recipe. I use ferment brine from a previous ferment not whey. I'll have to add cinnamon to my ketchup next time I make it everything else was spot on. Definitely subscribed. I haven't mastered making mustard. 😕

      Great question. Unfortunately, the high temps associated with canning will kill the good bacteria. 😕

    question ~ if you don't have Worcestershire Sauce could I use Braggs Amino Acids instead? Also does it eat the sugar so that it isn't really got sugar added?

      Hi Joy, the sugar is really more for the flavor. There’s plenty of natural sugar in the tomatoes to feed the good bacteria. So if you want to leave out the sugar you can. And yes, if you like the flavor of the Braggs amino acids you can definitely use that in place of the wish to share sauce. Hope this helps. Love, Mary

    Hi Mary. Love your videos. I am just getting into making my own fermented food and have a few of yours on my list to complete. We have not had tomato ketchup for years as I did not like the amount of sugar in the shop bought ones - so this recipe will be done fairly soon. We are trying to reduce sugar as much as possible so I have two questions. Does the fermenting reduce the sugar content OR if not can I use something like erithrytol.

      Hi Gayle, Thanks for visiting! So glad to hear that you are making ferments. Yes, the good bacteria formed during the fermentation process does eat some of the sugar - but not all of it. So if you want to go sugar free, you will want to leave it out. There should be enough natural sugar in the tomatoes to fee the good bacteria and create a nice ferment. You can add the erithrytol for flavor, if you want. BTW - Do you enjoy making other traditional foods in addition to ferments?     Thank you for this recipe. I'll use some liquid allulose for sweetener, so this will fit with our no sugar lifestyle. I don't have any access to raw milk, and no access to whey at the moment where I live, so I'm going to try this with sauerkraut juice.

    Hi Mary, I was wondering if you could use coconut sugar as the sweetener? I do have some date syrup that I have been wanting to try in recipes, so I am guessing that it would work similarly to maple syrup by reducing the liquid you add. Is that correct? I had never heard of sucanat. I have trouble with all natural sweeteners if I have very much at once, or for more than one day in a row. But sugar seems to be the worst. I have tried cane sugar, but I may have to try sucanat to see if I have the same reactions. Thank you for this great video! Even though it is two years old, it is right on time for me. I have heard so many great things about fermented foods. This would be a great way for me to start incorporating some. If I can find the right sweetener that is. 😊❤

      Definitely! Coconut sugar or coconut syrup will work great! Yes, just adjust the liquid you add to get the right consistency if you use one of the dried whole sweeteners.

    Anyway, I have a question: if whey is for the lacto bacteria, what is the raw vinegar for? Just flavor? Also, would water from homemade souerkraut work instead of whey, if that's what I have on hand?

    I'm playing with catsup again. Another you tuber I follow is Glen and Friends. He was making potato chips and mentioned they would be nice with catsup powder. I'm sure there is such a thing somewhere. If not there is now 🤣 because you just know I couldn't let that go. Third try was the charm. No, catsup wouldn't dehydrate from the bottle; too sticky and my tomato powder lacked something, but I eventually came up with a winner. Ingredients: 15 ounce can tomato sauce, 1 teaspoon scoby salt (catsup needs vinegar and I've never tried to dry vinegar) I dehydrate my favorite scoby and mix it 50/50 with sea salt for a popcorn topping and this is my vinegar in the recipe, 1 tablespoon raw turbinado sugar because brown sugar is too moist, 1/4 teaspoon onion powder, 1/4 teaspoon celery seed powder, sprinkle of garlic powder and a sprinkle of mustard powder. Using a dehydrator with a heat option, spread the tomato sauce on a couple of fruit leather trays and dry it until it is as dry as it will get. Tear the dehydrated sauce into small pieces and put it in a blender with the rest of the ingredients. Whir until it is powder. Adjust seasonings to taste. And we have powdered catsup! I know. I need to get a life...or a hobby...or something 😜
