Farming n marketing.. Good tech.. In Indonesia we have already done this tech farming..
In the USA, the older you get, the less you are expected to work until you reach a certain age where you stop working. It seems that in Japan, you are expected to work until you literally can't work anymore with only the workload adapting to what you are able to do. This may be part of a reason for longevity. I have observed in the USA that once you retire from work, your body condition goes down and you quickly become disabled or weak. I bet some 80-year-old Japanese women could win a fight with most 30-something-year-old Americans lol.

If you let them go, especially in warm weather the plant will "bolt" which means it produces a stem up from the core, sets flowers and then the flowers go to seed.

If you mean cutting off a lot of the outer leaves, they might not taste good and that's why they are left on the field to enrich the soil. That way nothing goes to waste
the worms will like those leaves....it will enrich the soil
