Stale food isn't spoiled or dangerous to eat in this game even with the weak stomach trait. Stale food just comes with an unhappiness debuff. Also if you can usually mix stale food with fresh ingredients and spices when cooking to overcome the unhappiness debuff and make it palatable to your character again.
The bridge base is legitimately what inspired me to try building my own base from scratch rather than renovating a pre-existing building. Can't wait to see more.
Good luck! It can be time consuming, and zombies will tear it down, but it's rewarding. There is a mod that reduces wood weight by 50% and I definitely recommend it. I'm not using it on this game though because I wanted to go completely modless.
I went with turning off construction damage. Is it cheesy? Yeah. Do I care? Not really, I'm here for a nice chill time. It's a fun game to relax in, and my character just wants to fish. The cabin ended up on that one road between West Point and Riverside, right on the river's shore. The tile has a maximum zombie amount of three, and I have respawn off anyways. It's peaceful.
You can eat stale food perfectly fine. But I whould recomend for stale food to be used in coocking. Even a simple cabbage salad will do fine. All you need a is a bowl and the stale effect isnt a issue
Stale food is safe to eat. You can always cook something simple like salad. Fishing debuff in winter is very bad especially if you trying spear fishing and have low lv skill
the helicopter might not have seen you and you just got unlucky with the migration, or you may have been outside for too long after the air activity was called, you can normally tell if it sees you or not by if the helicopter keeps flying around or hovers

Yeah I guess the helicopter can find you if you are outside a little bit before it shows up. This has happened to me before.
