  • A licensed commercial kitchen in our home has allowed us to save a huge amount of money on rent, and allowed me to work from home. It took a lot of work to comply with the rules of the health department, but we did it. Here is a walk through of my small but functional licensed commercial kitchen that we added to our home.     I have been a professional baker for over 30 years and have worked in American Bakeries and also Euro style bakeries. if I could offer a little advice to folks that want to get into baking for a business I would say to go out and get a job in a bakery for about 6 months. does not matter what type of bakery, large markets, food stores, small town bakeries, it does not matter. its the opportunity to watch what the pros do and how they do it and to learn about flour and secrets that have been created through generations of great bakers.

      That's exactly what I been wanting to do for years, but unfortunately I kept running into various time schedules with no permanent hours which was difficult for me, and my situation. It is a very good idea!

      rent is the killer of all wage slaves too, non ownership of anything ever. your pillow will ALWAYS cost you money... you cant even own your own home here in the fascist states of merica. u dont pay your property taxes... then FU were taking it so says the guvment!!! and then we'lll give YOUR (lol, you're...thats a hoot) pillow and giving it to the NWO fund. sorry, i just thought i'd add this lil tidbit. carry on :)

    I absolutely love that you took the time to create this video. I recently started a food trailer business and it has been one of the hardest things I have ever done. All the licensing, fees, permits, fire department inspections, license for LP Gas tanks, License for the generator, and not to forget the commissary. I am so interested in learning how build one in my home. Thanks again and God Bless!

      @richardabril Thanks for reaching out. It's in my opinion depending on which state you live in it is extremely difficult to make it currently in the food industry. Thanks to your State, Federal, local red tape process. The big corporate companies thanks to them they lobby so true small businesses can't enter into the market. They want zero competition. Like I mentioned, licensing, permits, quarterly taxes, permit for propane tanks, permit for generators, Health department out to fine you just to get money, commissary kitchen that's an extra $300 a month, food cost- Sam's Club, Restaurant Depot etc. in my opinion are not cheap. Then their is the gas you have to pay to fill up your car or truck to pull your your food trailer. Let's don't forget Insurance. Where and tear on your primary vehicle and renting a location to put your food trailer or food truck. The only way I can see you making it is if you find a location that will let you occupy their property for free. Get the hook up on your food some how. May be use food stamps if you can.       I'm sorry to be the bearer of bad news. I talked to other food trailer and food truck owners they acknowledged the same thing, however they like being there own boss so they out put up with it.

      @@disamarie I did not. I personally could not justify all the cost to keep the food trailer going. Spending the $300 a month for the commissary kitchen and the high cost of food and I was getting it from Restaurant Depot and Sam's Club. Gas, Propane tanks, etc. Its only so much you can charge for a hotdog and hamburger. Then there was the Health Department. They have changed. I was in the Restaurant Industry for 21 years and never had so much of a bad inspection never. The Health Department came out 4 times in 3 weeks trying to find something. There a business so they need to make money and they make alot of money on charging people fines. I ended up closing my business down after 8 months. My customers were so mad. I love food and I love putting a smile on my customers face, however dealing with all the laws, regulations, fees, permits, inspections, red tape. It just sucked the wind and my joy for the industry right out of me. Sorry to be negative.

    I've got a big family and I just really need a commercial kitchen due to the size of my family, so this has been really helpful for me. I am also thinking of doing something at home and this has given me some real inspiration

    Interesting video. I find it cool you got to put a mini commercial kitchen in your own house for your home baking business :) Very cool, I'm happy it worked out for you and hope all goes well.     Wow that’s cool. I want to be a stay at home mom now and forever. Just getting started. My mom used to bake cakes and decorate them at home and made wedding and quinceniera cakes!

    This is EXACTLY what I've been looking for! I've heard of it being done and saw remnants of a home that had their basement outfitted for commercial catering use but didn't know how to get the logistics taken care of.

    The only State in the Union that does not allow any cooking in a non commercial setting is New Jersey!!! all of you can go ahead with your cottage industries at home and make a pretty good living. I live in Jersey and am still waiting for approval for this last state that gets everything late.

      Connecticut didn't allow a cottage industry also, and only just got approved in 2018. There were a lot of folks that worked hard to get it done. Hang in there.

    nice mixer sweet oven I already have a Comercial 4 burner with griddle Garland stove,75 lbs deep fryer,2 door reach in beverage air fridge,6 foot by 3foot stainless steel prep table single door reach in commercial fridge,3 compartment sink.

    In 2000 I built a 2 story bldg. on commercial property in Los Angeles. There is a licensed kitchen downstairs and I live upstairs. The separation of upstairs and down made the permitting pretty easy. The C2 zone is actually ok for a restaurant too. Top and bottom is about 2300 sq. ft total. I will soon be looking for a caterer to rent it ( I am retiring) who wants to live and work here. Great location !

    Hi Grace, thank you for posting this wonderful video. My wife is think about set up a commercial kitchen to bake cakes. But I see the Cottage Food Operation License has a limit with the annual sales may not exceed $50,000 per calendar year. It there another type of home kitchen license that doesn't have this limitation on the sales revenue?

    Is this just for Cali? I'm in New York and from what I see they will NEVER allow me to do this. I can get some permits and bake from home but nothing that's refrigerated. Lol

      That’s not true, there’s Cookie Munsters ! They started without even knowing how to bake cookies and living in a car baking at night in someones bakery and now they have 3 making about $300,000! And they are only 25 years old.

    Florida cottage law would allow me to bake some things but no ingredients can be refrigerated. Two items part of the recipe are so....damn.
