if you have a wine pairing then please taste and drink them as they have been, most of the time, meticulously chosen by the head sommelier and the chef and combine with the food served. Amber restaurant has been on the top of their game a long time.
I tried to do that, but I can't drink that much and still function. I have learned to ask for very small pours so I can do just what you suggested and keep the pairings correct.
Remember, this was a 8-course meal with eight different wine pairings plus champagne before the meal and an after-dinner liquor too. Who can drink 10 drinks and still function?

I saw your other videos and I just want to tell you that Michelin starred restaurants are sometimes not very accurate. And there are restaurants that pay the Michelin inspectors. But if you are trying all the three Michelin starred restaurants sushi Shikon is a must go.
And keep in my Otto e mezzo isn’t gonna be the best
Yes, I know and agree with you, it's not always fair. I wrote about sushi saikon but did not have a chance to visit. Hopefully on my next trip to HK. Thank you for watching.
