I like how sweet chili sauce to them is a surprise, but there are so many sushi rolls (usually fried ones), that essentially have sweet chili drizzled on the top.

When I do actual sushi rolls (as opposed to sashimi or whatever) I usually get sushi rolls that involve eel sauce, and my soy sauce alternative is to ask for an extra tray of eel sauce.
I enjoy soy sauce but I like the taste of the actual fish and I think the sweeter, milder thing works better for me than the salt of soy sauce. Idk 😂

As someone who's favorite food is sushi, I have tested some of these. In my home town, there was a "super crunchy roll" that was a deep-fried tempura shrimp roll with cream cheese topped with sweet chili sauce. Ugh so good. There was also a sushi burrito place when I lived in Tallahassee that had pickled jalapeños among a crapton of delicious things such as Krab, crunchy fried onions, aioli, and other California roll stuffings. I miss both, lol.
I work at a sushi chain called Rock n Roll sushi and we have rolls with sweet chili on top, spicy mayo, eel sauce all kinds..so it’s def been done !
At this one restaurant I used to go to you could order this thing called "curry sauce," which was a thick creamy and slightly spicy honey dipping sauce. It was amazing on sushi.

lots of our chicken sushi comes with sweet chill and lots of sushi in Australia also comes with kewpie mayo and pickled ginger
Also an Aussie, but I've never been given sweet chili with chicken sushi, although I don't order chicken that often. Kewpie is used on some types, and the pickled ginger is a 'palate cleanser' which I'm pretty sure is standard internationally.

Ponzu is the best thing to really dip anything in but sushi especially!!
I usually order a roll called Alien Feet and this roll comes served with a sweet chilli sauce for dipping your roll in. It is so freaking good! By far one of my favorite rolls of all time!
