    I love lamb meatballs. Used to make them all the time ... until ground lamb went up to ten dollars a pound. Nice touch with the currants and cilantro. When buying eggplant, look at the blossom end ... you want those that have a "dot" not a "slot." The dotted ones will have less seeds. Choose whole carrots that have a blunt end rather than a tapered end---they will be sweeter. Green peppers with three lobes are sweet and better eaten raw. Those with four lobes are better for cooking. Choose watermelons that have a yellow bottom, not a white one. Look at the blossom end of a cantaloupe and choose the one with a wide "nipple."

    Amen to that one, man. I hate gigantic meatballs. I'm not a fan of eggplant, but I'd try this one!
    I live in Lousiana... if you're ever down here, you HAVE to try alligator (if you haven't already).

      I still think those meatballs were too big! My philosophy is that if you have to use a knife when eating them, what was the point in making meatballs?

    how high is the heat for the garlic and eggplant? 450?

    If the eggplant has a dot on the bottom it will have fewer seeds, and if it gas a dash it will have more seeds.

    Papaganoush is very isreal..yeah and so are pasta, burger, sushi, noodles..who care about "history" I mean if they live there lets call it their food .
