You can look at FSI solvers in OpenFOAM FOAMEXTEND version. If you have basic knowledge of OpenFOAM utilities, you can check CFD-Online Forum for more details about your problem.
To capture sharp interface between two phases, something called "compression velocity" is applied. This compression velocity contains a constant (cAlpha) and that decides dispersion between phases.
I didn't get that. But if you are asking about tutorial case availability in OpenFOAM, it doesn't come with installation. But you can follow my VoF tutorial on this youtube channel to setup the case.
