We’re from the dmv and traveling in December. After much thought me and huzzy are not bringing our toddlers. With that said is the resort kid crazy? Will we enjoy ourselves as adults only if that make sense?

You most definitely will enjoy yourselves as adults as they're amenities for adults only.
Kids 0-17 yrs are free at this resort.
I must say that the kids zone is a great option to leave them while you and huzzy enjoy your time together. They cater to everyone, adults, teens, toddlers etc. You most definitely will enjoy yourselves as adults.
They do have bars, a club etc if you're into that.
I took my kids and still had a great time with Tinojay without the kids so I am sure you'll definitely be able to do the same.
