There's something so rhythmic and beautiful the way the grass moves in Gen 9. Even when compared to other games foliage movement Pokémon S&V does it best for me. Maybe it's the simplicity.

IMHO, Pokemon Scarlet & Violet are better than Sword & Shield. Sprigatito is my favourite grass starter tying with Bulbasaur.
