I love cranberry beans. I do soak them over night and rinse them well before canning. This helps digest the bean better. I use fresh clean water with mine, but I also add onions and bell peppers. I'll tell ya, fresh bell peppers from the garden canned with these beans, are like heaven! When I open a jar the aroma is wonderful.
Do you have to alter anything in the canning process when you add onions or peppers? Did my first attempt at pressure canning beans back in May, but just used a simple presoak method.
I just canned a batch of pinto and jalapenos in pts 2 days ago. I do them just like you, but, like you said you feel you should have, I do the 1/2 cup dry beans per pint. Easy peasy and super handy!
I am looking forward to canning some dry beans when I get all of my tomatoes finished, lol. I want to add some liquid smoke to each jar as well as seasoning. And I am growing some Hoss Topazio beans 😁
Can purple hulls be canned like this if they dried out? I had picked some, got an emergency call & I never even got to she'll them, so I know they're good & dried.
Check out this article for how to get rid of them. getbusygardening.com/control-squash-bugs-organically/ We also have a product that works, see link below hosstools.com/product/bug-buster-ii/
My papaw used to talk about stringing up shuck beans. They just threaded a string through the hull and hang them up to dry. When they wanted a mess they just got some down and cooked them.
Didn't have a good enough crop this year BUT we do have a VERY similar October/Horticultural Bean, Supremo Bean (looks and taste almost the sasme): shorturl.at/guyR9
Thats a bit disconcerting. The NCHFP states that dried beans of any sort must be soaked prior to canning. There's a lady in TH-cam who is a Master food preservationist (2LeeLou Creates) that explains the reason for soaking the beans whether done overnight or the quick soak method. ❤ i know.. You've probably done this all your life.. I just want you guys to be safe. 💗
I canned pinto beans last year..added zesty ranch seasoning to each jar...2 tbs.. pints..made zesty ranch style beans

Interesting 🤔. Thank you. God bless everyone🙏💜
Same to you!
Mama Hoss, I put 1/2c plus 1/4c in my pints and I 1/2c in my quarts. Seems to be a happy medium. Love having beans ready on the shelf!
I really enjoyed this kind of video - it was helpful seeing it in the field and then what to do with it!
Glad it was helpful!

Sounds great!
I can dry beans all the time. Saves so much time if you get a craving 🥰

I put my rice and pinto beans in old gallon milk jugs and freeze them for 3 or 4 days and they seem to last for years and I rotate them.
👍
Thank you
You're welcome
They look tasty . Had with kids. In Ky once . Do you think they would do good in mtns.of SC . Thank you God bless
Yes
Would it be okay to add onion to the jars with the seasoning or better to wait until opening and add after heating the beans?
It would be fine

yes
How much water in bottom of pressure canner
I believe she says about 2.5“ water for pts and 3 “ for quarts
@@cimcd2546 ty I could hardly hear here.
I’m starting to lean towards halfway up the jar with water once the jars are in. Seems to make the most sense to me.
❤️
Hey the beans look good! Were there both quart and pint jars in the same canner? Isn't the processing time for quarts different?
yes, and yes 1 hour and 15 for pints, 1 hour and 30 for quarts
Can toss them topazio beans right in a pot shell and all? Or just the bean itself?
The outer part is really thick. We shell ours
Sheila, how many cups of dried beans did you use for the quart jars?
11/2
@@gardeningwithhoss Thank you!

When you say “dried,” do you mean left in the plant until the pods dry and then the beans are shelled and canned?
yes that is one way, or you can lay them out in a cool dark place and let the dry
Can u use kosher or canning salt for this process? Tfs
Blessings
Yes you can!
Can cranberry beans be canned fresh not dried?
yes

We call them leather britches. Yum!
Often called leather britches ❤
A little chunk of salt pork would be yummy.
Oh yes!
Love cranberry beans but canning dry beans without soaking and cooking 30 minutes is not a safe, tested recipe.
yall no longer carry this bean?

This is what is bothering me too. It wouldn't hurt to let them soak overnight just to be safe.
Thank you
