    I love cranberry beans. I do soak them over night and rinse them well before canning. This helps digest the bean better. I use fresh clean water with mine, but I also add onions and bell peppers. I'll tell ya, fresh bell peppers from the garden canned with these beans, are like heaven! When I open a jar the aroma is wonderful.

      Do you have to alter anything in the canning process when you add onions or peppers? Did my first attempt at pressure canning beans back in May, but just used a simple presoak method.

    Mama Hoss, I put 1/2c plus 1/4c in my pints and I 1/2c in my quarts. Seems to be a happy medium. Love having beans ready on the shelf!

    I really enjoyed this kind of video - it was helpful seeing it in the field and then what to do with it!

    I just canned a batch of pinto and jalapenos in pts 2 days ago. I do them just like you, but, like you said you feel you should have, I do the 1/2 cup dry beans per pint. Easy peasy and super handy!

    I am looking forward to canning some dry beans when I get all of my tomatoes finished, lol. I want to add some liquid smoke to each jar as well as seasoning. And I am growing some Hoss Topazio beans 😁

    I put my rice and pinto beans in old gallon milk jugs and freeze them for 3 or 4 days and they seem to last for years and I rotate them.

    Would it be okay to add onion to the jars with the seasoning or better to wait until opening and add after heating the beans?

    Can purple hulls be canned like this if they dried out? I had picked some, got an emergency call & I never even got to she'll them, so I know they're good & dried.

      I’m starting to lean towards halfway up the jar with water once the jars are in. Seems to make the most sense to me.

    Hey the beans look good! Were there both quart and pint jars in the same canner? Isn't the processing time for quarts different?

    • @gardeningwithhoss
      @gardeningwithhoss  2 ปีที่แล้ว

    When you say “dried,” do you mean left in the plant until the pods dry and then the beans are shelled and canned?

    • @gardeningwithhoss
      @gardeningwithhoss  ปีที่แล้ว

      yes that is one way, or you can lay them out in a cool dark place and let the dry

    My papaw used to talk about stringing up shuck beans. They just threaded a string through the hull and hang them up to dry. When they wanted a mess they just got some down and cooked them.

    Thats a bit disconcerting. The NCHFP states that dried beans of any sort must be soaked prior to canning. There's a lady in TH-cam who is a Master food preservationist (2LeeLou Creates) that explains the reason for soaking the beans whether done overnight or the quick soak method. ❤ i know.. You've probably done this all your life.. I just want you guys to be safe. 💗

    • @msday2vzw
      @msday2vzw 2 ปีที่แล้ว +1

      This is what is bothering me too. It wouldn't hurt to let them soak overnight just to be safe.
