You had me at the Hello Kitty theme! I really love the glass jars with cozies, and bowl! The only thing that I would do differently is the flooring. Vans all have tracks and holes that gather dirt and debris. (drives me crazy lol) I have to have these covered with small throw rugs that can easily be take out and shaken. Our poodle's dog bed also stops his little paws from getting down there are well. Have you considered switching to ratchet straps to tie down 'the kitchen' and things that could fly around in the event of an accident?

I like how this woman arranged her camping van setup, very simple & not too much stuff. She's a very organized person, some people like to put the sink inside the camping van to make the place crowded this is nice.
Great use of space. Adding a flat-top 2 gal igloo cooler with spigot would give you a variety of options: water dispense (cleaning), ice-packed cooler food beverages, extra seat or table top, extra storage when water/ice is not needed.
You are most definitely the most least minimalist I have seen so far and it is soooo neat very nice I really like the more than one use you have showed for many things or little things 🤭

Nice minimalist setup. It would be cool to build a platform under your bed that has 2 pull outs. One from the back and one from the side toward your back seat. 😊
I love your set up. I think I would have to have the bed on some type of frame that would accommodate at least 2 to 3 single storage bins/containers that I could pull in and out from under the bed where I could store my clothes, shoes, and whatever else I need. I can see a cooler size fridge where the trash can is at. I like that you left the van seat in there as it looks rather comfy and it provides a nice space in the back of it for more storage. Well done.
I did my minivan similarly. I went with the cot though. I carry tools. Most of the room under cot is taken up by these tools. Can call AAA out in the middle of no where😂 i carry propane and a pressure cooker. I use the pot by itself to simmer. I eat a lot of stews and soup so it works for me. I also cook rice in it. I have a 8 in iron skillet with lid. I make bread and cornbread with it. I have a a Dometic refrigerator freezer. Rarely use freezer. I keep milk sourdough starter buttermilk and few condiments in there. I use my pressure cooker pot for mixing bowl. I have cutting board. I have shoebox that has locking abilities that hold my utensils. I have dough blender, silicone spoons and spatula. Cane spreader. I also have a George Foreman grill to cook fish. I cook fish out of my van for obvious reasons. I by chicken and debone it. I keep it for a few days in refrigerator. I don't need a lot of power because i don't do multimedia. I just have my tablet and phone. Don't spend a lot of time in my minivan. I am out and about all day. At the gym or seeing sight's. I use planet fitness. I do all the maintenance on my vehicle myself. So it never goes in shop. The only real expensive stuff i have is my minivan and tools which are insured by my vehicle. So if my minivan got stolen or weaked they will be replaced. I am a senior disabled and i get senior cards to ride busses to go around towns i visit. Helps with not wearing out my vehicle. I don't spend a lot of money. I have a 10x20 storage that cost $110 a month in my home state. Phone i pay by the year unlimited. $360 a year. Hotspot business plan $119 amonth. I get 28.5 mpg hwy and 18.8 in city. I have 2012 Grand Caravan SXT 3.6 i bought for$2,000 cash. Even with what i have, i stll have room. I have potapotty. 20 gal water. 20 lb tank propane with last me a month. So if i get snowed in or it rains for a few weeks i am set.
Nice set up. Plus it looks so organized and clean. It's a good idea to have some canned chicken. You can have a chicken salad sandwich or tostada. I had it in my mind because that's what I cooked today but with rotisserie chicken.
I love love love the set up!!! Just FYI using the “no frame” method you’re not allowing for airflow around the mattress. Your bed can mold rather quickly that way, so your idea of the cot is perfect!!! Love 💕the channel!!

Wow I'd think you'd get some condensation issues with the toilet paper. I think I'd zip loc each roll just to keep them fresher longer. that's a nice set up overall , and I probably would do the cot deal , just to free up some storage space. I might even incorporate some back of the front seat storage on the passenger seat, for stuff like "binoculars" for those "Is that a UFO ?" type moments.
I see the appeal, but it wouldn’t be for me. I feel like the closer I get to minimalism, the closer I get to just surviving and not “living”. I enjoy a few hobbies too much to leave them behind, so at the bare minimum, I need my puzzle books and art supplies. I also love board games, and even thought I redesigned my favorites to be more compact, they still need a spot. I travel with a lot more water, a full first aid kit, fire extinguisher, fans, basic tools, things like bear and mosquito spray, etc. It adds up really fast. I certainly understand meeting the challenge. I just do it with my board games, whereas you do it with your whole vehicle. :)
Every time I see another video of yours, it seems better than the last! haha. I'm truly a more minimal person as well and REALLY appreciate seeing exactly what you have for your set up...each cubby etc. Can you tell me how wide your mattress is? Can I get something that is 30 inches wide to fit like you have there? It's a narrow twin (not trifold), so I'd have to let it incline a bit at the head in order to have the room at the foot. (Am trying to not purchase anything other than what I already have!) I LOVE how you can enter your van from either side easily enough too....and what a great idea using the trunk organizer for holding the grocery bags! You are definitely my 'go to' for minivan minimal set ups!!
I believe you can snugly fit a 30 in wide one. This one is 25 inches and I have a lot of room still. Thank you 😊 I always prefer a minimal and less cluttered space. 🚐 thank you 😊

I have this same set up in my van . I used a youth bed from ikea ( works because I am short.) so this allows for more storage.
