I'm intrigued by this machine. Given that I only sharpen knives it'd be a lot quicker than the T8. I only ever sharpen at between 25 and 40 degrees anyway so this machine will do all that and I'm thinking it might be useful at the farmer's markets where I need to sharpen a lot of knives very quickly. I'd do them much quicker too.
The advantage with the Tormek T-2 Pro Kitchen Knife Sharpener is that you have everything in one machine. A diamond wheel to sharpen the knive and a honing wheel to remove the burr. It is designed for professional kitchens where you have to have a clean environment. 😊
Are there any plans to release a knife holding jig like this for the T-4? I love my T-4, but adjusting the angle and using the knife clamp on it is extremely cumbersome compared to something like this.
This is a patented jig expecially developed for our knife sharpening machines Tormek T-2 Pro Kitchen Knife Sharpener for professional chefs and Tormek T-1 Kitchen Knife Sharpener for home chefs. We do not have any plans of offering this to our watercooled sharpening systems.
@@thechumpsbeendumped.7797Tormek wants us all to buy the whole new machine. It think it would be only fair that they made a jig for people who has already bought their earlier machines. I got one of their really old models and two more recent and just haven't got space in my flat for another one.
@@TormekCulinaryI have the T8 which I use for knives and tools but I'd be very interested in an adaptation of the knife jig from T2 for the T8 with the diamond wheel as the older jig is quite cumbersome and time consuming. We cannot buy a whole new machine just for the jig.
Why isn’t there a jig on the honing side as well? A premium machine by this point should come with everything. The point of making a fixture is to make a repeatable process. No point having it on the first process then free handing the second.
Would be great to learn how many knives you can sharpen with one wheel. They kinda pricey, and if they erase fast, you will only work to buy new wheels....
It depends on how often you sharpen, how much pressure you are using and which kind of steel you are sharpening. But we would say you can sharpen (at least) around thousand knives with a diamond wheel. That said: it will get finer with the time.

Which Tormek product id best for beveling and hollow grinding blades
I run the my blades over a chunk of wood to remove the burr. Then I go to the strop wheel but I also use a jewelers loop when I’m sharping my blades.

Can you show how to sharpen single bevel japanese knifes, for instance a deba would be nice. Thank you.
Hi! The principle is exactly the same, but you only sharpen on the bevel side, then hone both sides of the blade. Stay sharp!😊
Tormek - I love my T-2, but please make a jig for sharpening scissors.
We do have a jig to sharpen scissors for our watercooled sharpening systems.

What alloys is it not suitable for?
I only edge boning knives which tomek is best for boning knives
You can sharpen those with the Tormek T-2 Pro Kitchen Knife Sharpener!
The diamond wheels look different on this newer version of the T-2. Are you able to sharpen on the side of the wheel (free hand) to get a flat edge?
You could sharpen on the side as well, yes.

Can you attatch a Japanese whetstone wheel to it?
Hej Tyler,
the Japanese Waterstone should only be used with water. Therefore we recommend to use it on the Tormek T-4 and T-8.
Stay sharp!
