Even in English they are called "greater than" or "greater than sign" "less than" or "less than sign." So if you must add သင်္ကေတ in their name, you can say ပို၍ကြီးသော သင်္ကေတ for this > and ပို၍ငယ်သော သင်္ကေတ for this < .
