Don't know if anyone already posted this tip but an easy way to remove excess pastry that hangs over the edge is to roll the rolling pin across the top of the flan dish and the excess pastry falls away. Loved the video and you did a really good job, the tart look amazing. In my opinion the filling should be very moist in the middle, that's how my mother used to make it.

As someone from Bakewell, while Bakewell Tarts are great, Bakewell Puddings are the best. They don’t look as appealing but with cream or ice cream, they may well be the best British dessert. But I may be biased 😂😅

Yes, as an Ashburnian I have to agree, Derbyshire bias maybe, but a real Bakewell pudding is on another lever altogether.....and just one more reason for Alanna to visit our wonderful county. Bakewell Pudding, Ashbourne Gingerbread, Buxton Pudding, Dovedale Blue Cheese, Sage Derby, Derbyshire Stilton, Derbyshire Oatcakes etc. The incredible countryside, our pubs, country walks, Ashbourne Royal Shrovetide Football, Well Dressings, industrial heritage and so, so much more. I know that you have said you would love to visit the Peak District Alanna, you really should, it's not perfect but it has got a lot to offer and both can and will take your breath away....

The texture looked spot on to me. I’d say that was an outstanding first attempt. If you find rolling out the pastry difficult you can just put the ball into the tin and push it into shape. The first time I used baking beads I didn’t know you were supposed to line the case with parchment and I had to dig the beads out of the cooked case with a teaspoon.

That looked pretty good for a first attempt.
Fresh baked bakewell tart smells and tastes so good.
    Some tips for next time.
When picking up the base to put into the tin just roll it up around the rolling pin and then unroll over the tin.
Trim after the blind bake, it shrinks a little.
A spatula or wooden spoon would have made it easier to cream the butter and sugar together.

  • @paulcullen814
    @paulcullen814 2 ปีที่แล้ว

One tip for the pastry when lining the tart tin. If you leave the extra pastry over the edge of the tin then blind bake it, you can use a knife to trim the extra off once the tin comes out of the oven. You will find that the pastry does not shrink back from the edge of the tin like it does if you trim the extra off before baking it. You will then end up with the pastry to the top of the tin when you fill it and bake it again.

If you can ever manage it, I recommend a trip to the Derbyshire Dales and a visit to the town of Bakewell itself. There are two small bakeries almost directly opposite each other, who both claim to have invented the Bakewell Pudding. Buy one from each of them and decide (if you can) which is best. But don't tell either bakery it's second! :-D

I did enjoy seeing you with the Bakewell tart. Quick tip for rolling pastry, put some cling film or parchment paper on your bench. Then flour it and roll on top of the film, you can then turn it around to get a constant thickness. It also makes it a lot easer to lift over the tart pan.

That scrunching the baking paper trick was genius! I normally end up fighting with it to stay in the tin 😆
As someone who enjoys baking, you actually did really well with your techniques. A couple of tips for next time though:
    1. Roll your dough between two things that are the right thickness (e.g. chopping boards or pieces of wood) to get your dough even
    2. Cream the butter and sugar with the back of a wooden spoon instead of a whisk to make it easier
    3. To avoid the shrinking issue, either trim the edges after it's cooked (you can snack on these bits) or just remember to leave a bit extra so when it shrinks it's the right size

I remember visiting Bakewell a few years ago and, on asking about the tart, I was firmly but politely informed that it's the Bakewell Pudding that is the original desert from Bakewell. The Tart is a relatively modern (probably southern!) upstart pie/cake, and very much inferior to the pudding. Of course the various Bakewell bakeries are very happy to sell you either, but I have to admit that the pudding I had there was delicious!

    I'm giving this 15/10 Mr Kipling's Cakes!
You may worry about your abilities in the kitchen, dear Alanna, but the more you do this, the better you become. What more evidence do you need than the result of this project: a glorious looking, clearly great tasting Bakewell Tart?
When rubbing butter into flour, the trick is to make sure it is very cold. Cut it into small cubes and rub between your fingertips until you have something that resembles fine breadcrumbs. A select few gastronomists recommend using a hard boiled egg yolk; none can say exactly why, for there have apparently been no scientific studies to date, but this results in a richer and flakier pastry. You could experiment at your leisure / peril... In any case, when it comes to adding the water, any amount specified by a recipe is only a rough guide, and you will find (as you did here) that you may need more than suggested, though it should only ever be enough to ensure that the dough is fully integrated, pliable and smooth without being sticky. As the celebrated chef Marco Pierre White says, remember that you can always add but you can never take away.
I never cook with an apron on, so don't feel guilty about that! Just make sure you aren't wearing your finest apparel.

Cheat's way to rub in the butter is to use a food processor. Cube the butter and drop into the flour/icing sugar inside the food processor bowl. Run the food processor until you cannot see any lumps of butter left. Tip into your mixing bowl and bind with the egg yolk and water. With practice you get to learn the dough consistency and whether it's too wet or too dry.
Creaming the butter and caster sugar for the frangipane filling. Use an electric hand whisk. Life's too short to use a manual whisk.

I'm a huge fan of baking, so your cooking videos always rock. The Frankenstein technique is tried and true when doing pies or tarts!

Well done, and getting more adventurous with the recipes, Alanna. The prettiest looking dishes don't always taste the best, far better taste when you can homemake your own, and you know what it contains.

Brilliant, I was totally impressed that you made your own pastry and it turned out well, every time I try it just ends up a sticky mess. The end result looked amazing, I'm glad it tasted good too. Made me feel quite hungry. Just need some custard or Ice Cream to go with that now! Congratulations.
