    I made this with the half a cup of bourbon. The chuck roast turned out incredibly soft. I used center cut chuck roast. One of my favorite recipes. Easy and delicious. I walk away and do other things while the meat is browning. So healthy with the carrots, potatoes, tomato, onion, garlic, beef, and broth. What a flavor

    Tip: When you chop the onion, leave the root part on until the last, it won't be "stinky" and you won't cry!

      I always put the ceiling fan on whilst cutting onions. Because the air is coming from above, it pushes the onion juices away from you and keeps fresh air out of your glasses... No ceiling fan, use cross ventilation... Anything to keep the air fresh in front of your eyes. With love 💜 from sunny 🌞 Arizona 🌵.

    We are hispanich so i add beans of any kind and serve it with white rice. I also love the purple potatoes and mushroom

    I think adding the lemon zest and juice right before serving is an inspired choice.
    If I were out of lemons, I would replace with a good quality sherry vinegar and chopped flat-leaf parsley, but what you presented was a perfect beef stew imo.

    I would add mushrooms , celery, and a little parsnips would be good with the carrots. I think even corn and green beans would work well in this stew as well.

    Looks great! I always add celery when I make beef stew. I also use lemon pepper to season the beef.

    Delicious! I didn't add the brandy, or the lemon, infact I didn't even add the potatoes, just carrots and beef (I made garlic mashed potatoes on the side and served with dinner rolls) using the sauce as a gravy --- very good! And my house smells amazing.👍 😋

    Hands down the best beef stew my family has ever had! We tried the recipe with both 2 tbsp and 1/2 cup and the one with a 1/2 cup of bourbon was better! Thank you for this amazing recipe!

    A stew is one of those things that you can put just about anything into and it will taste wonderful, but to respond to your prompt, first I would probably brown a bit of tomato paste after browning the aromatic vegetables and just before deglazing, and second, if you want to use mushrooms, but you have finicky eaters, try using ground dried mushrooms as you would a spice. A tablespoon or two ought to do it. This adds an earthiness to the flavor that can't really be easily named if you don't see and taste the otherwise rubbery bits. I've never thought of using lemon zest and juice to finish a stew, but for acidity I have used pomegranate molasses or a good sherry vinegar at times.

    That looks amazing, do you have a good bread for sopping? I agree with adding mushrooms, and I make German dumplings if I had not made bread.
    (The brown sugar suggestion mellows out tartness of tomatoes, good suggestion. )

    Yes, those brown bits add flavor... but don't skip getting them off the bottom of the pan for 2 more reasons. 1. If there's a lot, it may burn and leave a foul taste. 2. It's waaaay easier to get the bits off now 4:35 than afterwards with a scrubbing pad. 💜🌞🌵

    I love making a beef stew that’s got a lot of vegetables in it. Things like corn, carrots, peas, celery, onion, garlic, and a fresh homemade tomato paste to help bring out all the flavors with other herbs and spices. Garnish a bowl with a few pinches of shredded cheese and a side of crackers or a biscuit and it’s the best. ❤️

    Best way to cut onions is very cold they release less oil/smell and don't make your eyes water quite as much

    My mother made really great beef stew with similar ingredients all tossed into a large pressure cooker. Very little time later = dinner! She trimmed the fat from the beef, of course, because she wanted our arteries to last a long lifetime. So far so good.

    I would have carmelized the onions a bit more (before adding the Brandy) until they were a rich golden brown. Time wise I would have started the onions before seasoning the meat. 💜🌞🌵

    I personally enjoy a little thickness in my stew so a little flour in the beginning or a corn starch slurry at the end. Some green peas are yummy too!

    Your chuck roast had nice marbling. So much better than beef stew meat that you can buy precut. Thanks for the tip. But they are usually square not round like that.

    I also have a mushroom "won't eater." Sometimes I cook some for me on the side, in butter, and add when serving. Sometimes I am selfish and add them and "the other half" can pick around them.

    I'm a mushroom fan too. But I also love frozen peas in beef stew. I like the frozen because they don't get soggy like the canned. They stay nice and crunchy adding a needed texture profile.       @@budoneof15 , I didn't read his show notes until now, but he mentions adding pasta, rice or beans to make it a bit hardier. Maybe it's a regional thing? IDK. 😕.     The first time I saw Baby Potatoes you made a perfect easy beef stew that 90% of people won't add red wine that's a little strange adding wine to the food however I would rather add beef broth instead of red wine this video is helpful for everyone thsnks.

    I'm not sure why you seasoned the meat so early? Salt will draw the moisture out of the meat? 💜🌞🌵

      Suzi SaintJames Simply to enhance the flavor. The meat will not be dry especially due to the fat still on it.

The seasoning profile was spot on, but I was always told taught to season meat the instant before cooking or the salt will draw out the moisture. That's why many rubs are saltless.       That's a myth, you can season meat way ahead of time, like season, place in fridge for a few hours or even a day ahead of cooking. The salt concentrates the flavour without drying the meat

      @@tariqmohamed , well here's the science. Salt draws moisture to the surface of the meat, where the salt is dissolved into the moisture. If you wait a day or two the meat will absorb the brine and be flavorful. But salting the meat 30-45 minutes ahead only draws out the moisture. It hasn't had time to reabsorb the moisture. That's why when you bread your meat ahead of time... the breading gets all soggy. Do your research, we are both correct... No myth. 💝☀🌵

    I'm going to make this, but I will definitely toss the beef in flour before cooking,and as it will help to thicken the sauce and make it less like soup broth. I don't think I'll do the lemon at the end either. I'm looking forward to making this.

    Definitely mushrooms. I would also add frozen peas, but only in the last 15 minutes of cooking so they don't get too mushy.

    I'd think if you wanted to really thicken this stew up, you could make a roux to mix in prior to all the wets. Maybe even brown the butter and then the flour a bit to darken the roux slightly so it won't lighten the color of the stew.
