Back on a food kick you guys! I have talked about many foods that were new to me in Germany but here are some foods that I did not think I would like....
Between beer, pretzels and meat. There are so many different foods/beverages that I have had a change of heart about. I like to think I have matured in so many ways, tastebuds included :D Now don't get me wrong, I love a good bienenstich BUT I would enjoy an American cupcake any day.
Please forgive my American sweet tooth...I know a bienenstich isn't healthy :p

The main secret about German pretzels (Brezels) is the reason, that they are made with food safe sodium hydroxide (NaOH) + water solution in Germany. Sodium hydroxide is a very caustic base, but as far as i know, if you put it into an oven it gets transformed at higher temperatures into something that can be eaten. This is also responsible for its taste. It might be possible, that sodium hydroxide is not allowed as food additive in the USA. That might be the reason why you probably can't find real German pretzels in the USA.
Food safe sodium hydroxide has the food additive number (Lebensmittelzusatzstoff) E 524. This number is part of an European food additive numbering scheme. You definitely won't make pretzels without food safe sodium hydroxide, so make sure, that it contains that number on its package. On the free marked you can also buy technical sodium hydroxide, it could contain other things that are not food safe so don't use technical sodium hydroxide.
But keep in mind, in Germany you usually don't buy sodium hydroxide to bake pretzels on your own, no one does. You usually leave that job to the bakery and buy the pretzels there.

Thanks for the video, it is really interesting to hear! I just wonder... Now where your sense of taste is germanized, do you enjoy the sweet food in the USA more or rather less? Do you enjoy it more because it tastes now even sweeter or is it too sweet for you?

It's yoghurt. yes, plain yoghurt. not sweetened yoghurt, of course. just the plain, "natural" yoghurt. one small tub of yoghurt (like 50 g) and up to an equal amound of mayonaise. don't drown the stuff, the one you can buy in supermarkets are disgusting mayonaise'd. If the white of the mayonaise-yogurt lets your ingridents (bell pepper, a really small fried onion, bacon, cucumber and pickled cucumber (you know..... the one in the glass) and of course potatoes) look like some mom put a bit lotion on her kid at a sunny beach, THAT'S the right amound. also, don't forget salt and pepper.
receipe goes for 6 (primarly) waxy large potatoes. And I repeat: don't add too much yoghurt- mayo- mixture! (also, you can add what you think fits into.)

also, Bienenstich: it's almond in honey, with some kind of muffin dough- the filling is cream and vanille pudding. with honey. Bienenstich is called like that because it's so sweet, it gets bees to land on it and if you're not careful and eat it outsite, they gonna sting you.
and holy crap, I knew they are using sugar waaaay too much, but holy crap if you felt like that cake wasn't sweet, I don't think I will EVER dare to eat a cake from the US. or ANYTHING from the US.

    • @HayleyAlexis

I actually can not eat the sweet stuff here and I made a "German" cake for my mother and her friends and they did not like it at all but I couldn't get over it... They said it wasn't sweet enough and I put a cup of sugar in the cake.

we usually use vanilla pudding instead of cream. The almond glaze is really easy to make, you just need a lot of butter, some sugar and vanilla sticks and cream in which you will boil the almonds. Kinda :D

    • @Zathyra80
      @Zathyra80 6 ปีที่แล้ว +8

+viomouse creme is the official name for pudding, I think that is what caused the confusion. Also I wonder, all the comments say bienenstich is filled with vanillepudding, but I know it only with half pudding and half whipped cream mixed together. Is that only that way in my region?

    • @starkast713
      @starkast713 6 ปีที่แล้ว +6

When my memories are correct, then there should be a story of the creation of Bienenstich. There where two brothers (i think), who saved the town from babarians with bees and honey (i dont know how excatly). So as a gift from the people in town the two brothers got a own cake, which is named Bienenstich.
Im sorry if the story is a little bit wrong, because I heard the story from a baker four years ago.

Obatzda, I couldn't translate.

Is Obatzda similar to Liptauer? I loooove that stuff. You can't get it in Australia (that I've seen, and I've looked), so I have to make it myself. I love Leberkäs too, which you can get locally. I like to put some Liptauer on my Kaiser roll, and throw on a thick slice of Leberkäs - which isn't the "right" way, apparently, but it’s a solid breakfast.

    • @hansha5721

There are two different "histories" of the word Leberkas. The one Xet named, but Leber because in former times in some areas they did liver into it and not cause of the colour. The other is, that "Leber" comes from "Laib" like the "Brotlaib", which relates to the shape, and the "Kas2 is a Bavarian word for just a compact piece of food.
No one can say for sure, which is the correct history, but I like the second one more.

Thank you very much Hayley. You always find the cutest way to explain the life in Germany. And you are so right. Sauerkraut can be very awful or very well. Hi Hayley The thing is... (Not to diss the Americans but..) in Europe "real" ingredients are used not processed stuff.. (if you select a good supplier ;-) ) and that's why chocolate is so much tastier than the Hershey junk and the German cakes are so much more delicious than most of the plant produced stuff in the US.
German food is very rich and fat but it can really taste great :-)
Of course for the REAL good food you should go to BELGIUM! :-) :-) And especially the Belgium beer ! That will open up your taste buds and stretch your tasting palette ! :-)

Like we Dutchies all live in windmills and walk in wooden shoes ;-) Anyways.. if you live in Munich do you wear "Tracht" , the traditional Bavarian clothing that now is popular at Oktoberfest? I used to work for a company with HQ in Munich so I left thousands of footsteps in your city :-)

Oh, Bienenstich is delicious! It's filled with what we call here in Switzerland "leichte Konditorcrème", which is basically a thick vanilla custard with folded in whipped cream, which makes it really light and fluffy. It has the perfect balance between lightness, sweetness and crispiness... I absolutely love it!

I miss "The Last Chance" between new and old Bad Aibling. A pre-70's strip mall that had a department store, bakery, butchers shop, and beer garden. I would ride there on my bicycle 3km at 8 yrs old each Saturday to visit the merchants and say hello practicing my German. The baker would give me a simel, (small hard roll) the butcher would give me a slice of bologna and I would eat it at the beer garden with a glass of cola. Best of times. Sauerbraten ruuuules. I hope knorr makes the flavor recipe mix forever. It is the 3rd necessity for life after air and water.

We used to eat this in school in our morning break, when the local butcher visited us.

Hayley Alexis Its probably the least sour maynonaise compared to others. Oh, and if you like Kartoffelsalat, you gotta try Polish Sałatka wielowarzywna. It does contain quite a bit of mayonaise, but its really good, and tastes similar to Karoffelsalat. There are different variations of Sałatka, some even contain meat. But its really delicious. LoL, the Bienenstich-experience reminds me of everytime I went to the US - and I wasn't able to eat "all those great candies". I remember my cousin has bought like everything you ever heard of (over here in sit coms, so on) for me to taste (pop rocks, twinkies, so on). I tried like four, five different things and just was like "Eww, it just tastes disgustingly sweet and nothing else at all!" - "Told ya!". Ok lie: I stayed addicted to Jelly Bellys. Everything else: Brrrr.
Lucky for me my aunt baked a lot and got loads of HARIBO from my grandparents every month. The only country with a worse sweets experience were the UK. They truly make their sweets out of sugar substitute, wood flour and glue.

A few more suggestions to try:
Nordseekrabben (North Sea Crabs) - They are like a smaller version of king prawns, but much more intense in flavour.
Pickert - A Westphalian kind of pancake, but based on grinded potatoes, sometimes with raisins. Just awesome! (But you will most likely not get that in Bavaria)
Spezi - At some time at any restaurant that is not a fast food joint you have to order a Spezi as a drink. It's a mix of Fanta and Coca Cola. It's available in bottles in Germany as Mezzo Mix, Schwipp Schwapp and numerous other names, but imho the best is mixing it yourself with 60% Fanta and 40% Cola. I did that once in the USA and everyone looked at me like I were some alien. So it seems like something you may have never tried.

So now it is settled! If you want to broaden you culinary horizon, get drunk and go for a Currry Wurst!
But something was missing. Das Mettbrötchen! Maybe you have to be drunk for it as well for the first time,
but it is so good and worth it to try!

Bienenstich has mostly a pudding-cream inside. It's basically pudding for pastries, but the quality depends on the manufacturer. But there are way sweeter cakes, probably just not at that particular cafe. Mostly the chain-bakeries in germany are making their fresh cakes overly sweet. Or at least too sweet for me. And the glaze on top of the almonds is mostly just sugar and maybe some fruity tasting ingredients to preserve it longer like lemon juice.

If you once get the chance to visit the Allgäu region (1.45 hour drive from München), go get a Leberkäs on a Seele (type of bread with cumin) at Fidelisbäck in Wangen im Allgäu (beautiful little town in the Baden-Württemberg part of the Allgäu). They have the absolute best Leberkäs and it taste just heavenly on a Seele😍 Also, the Allgäu is soooo gorgeous!

Bienenstich (Bee Sting kind of works) was a typicel Summer Cake, it attracted alot of Bees cause of the Sugar on top of it. And if you didnt watched, sometime a Bee sits on the spoon or fork and may stings you in the mouth or tongue if you are not attentively .. that where the Name came from ^^

Being german, it's crazy to think a Bienenstich of all things would not taste sweet enough when you tried it the first time. To me, it's one of the most sweet tasting things i can think of.

Our potato salad is good in the US! Not the store bought kind, but homemade is the best!

this reminds me of my last trip to the States when my Mom wanted to have a pretzel at Auntie Annes and I was telling her "NO, you do NOT want to eat this." xD It was her first time abroad and she was clearly expecting a german pretzel. But I refused to buy one. At the end of our vacation she thanked me and was very happy that all the food she tried had been really good. :D

Hey! Suaerkraut could be very yummi! I also am not a Kraut-fan but one time in a small village called Großfurra, near Kyffhäuser, there I had the best Suaerkraut ever. And it was all but sour!

Do the american sweets taste different for you now, that you are used to the german amount of sugar?

Beers here have a lot different tastes. Get a few and try them (one bottle of each) in the evening when you are with a group. There are probably some you can`t drink. Happens to me. Schnaps is the same thing. Apple wine too.
Traditionally there were Beerwarmer(Bierwärmer) which you might still find in old bars. So there was a time when beer was drunk warm on purpose.
You have to try Handkäse/Harzer with vinegar, oil and caraway. Best when the cheese lies for a while. After you mix it up also wait 20-30 min before you eat it. Since you are in bavaria try weisswurst with sweet mustard.
You also might like farmers breakfast (Bauernfrühstück), Bratkartoffeln (just oil or butter, salt and pepper) "Schlachtessen", "Buchteln","Kreppel" or propper made "Reisbrei" with suggar and cinnamon.

If you want to try another warm wine, try mead.
Not a particular German thing, but I always enjoy some at a Weihnachtsmarkt if they have it

yes, it is very loved indeed! i hooked up my buddies with cherry mead and they love it. at the start they were always crinching when i mentioned meat. one tried it and loved it, the other never did try it until i brought over the cherry meat and both guys were head over heels. maybe you should try it too if you have it there. Roter Wikinger Met. Best i have ever had

We (friends and I) used to order it online, now I believe we have a little medieval shop next town which sells it.
Mainly I buy it once a year from (I do believe) a Norwegian who also sells reindeer furs and different kinds of mead based mustards. He also sells other kinds of mead, like apple cinnamon, which is also awesome. The worst I had had vanille, I don't recommend it...
Edit: no I'm from Bonn, so the west^^
