If they are not big enough, even pay more workers labors and hours is still cheaper than automation buying machines. But quality is not that standard as machines. Many ways they use here are the same as what we do at home. A lot of work.

The first ones might be eclair-shaped, but they're not eclairs. Eclairs are made with choux pastry. They puff up when baked and a filling is piped into them. They even used a Silpat mat with guides that bakers use to pipe out the choux pastry to get consistent eclair shapes, but then cut out dough in eclair shapes with a cookie cutter. They still look delicious and amazing, though!

The process for making the ring cakes was soooo inefficient. Wasted ingredients, 1000 extra steps, prepping things individually which can be done in bulk. The dulce de leche was a perfect example. So you make it in house by boiling the can. You add no flavoring or anything else to it and use it straight. What is the point? Extra man hours (which I'm sure are expensive for the type of training required) when you could instead buy dulce de leche premade. The cost for those ingredients will be higher than regular condensed milk, but less than what it will cost for the hours those employees are on the clock. Using silpat to texture the box when a flat texture + the airbrushing would've gave a velvet texture. Cookie crust, hard as a rock. For that much work this should be the best dessert you ever had. In reality it's a hard chocolate crust with mousse and strawberry(?) jelly. They will have to price this high to make a profit and I'm not convinced people will want the end result for more than once or twice. Which is likely why they are doing TH-cam to make more money and have some marketing. I'm all for cute fancy desserts, but my eyes are wincing at the amount of money being lost by the extreeeeme inefficiency in process 😭😭😬 Simplify the steps, combine where needed, figure out what can be done in tandem, what can be taken out. You'll get a more consistent result (seriously, sanding the crust boxes? I shuddered at that part, what a waste of time for the worker) and reduce costs overall.
