- The summer rainy season in Yunnan is the perfect time for wild mushrooms,Even after the rainy season, Yunnanese always have preserved mushrooms all year round.
This year, the wild mushrooms in Finland are growing exceptionally well, I've picked a lot of porcini and Albatrellus ovinus, which are unique to Finland. I wanted to preserve this autumnal delicacy in a Yunnanese way: preserved in garlic and aromatic oil

Ingredients:
Fresh Penny Bun (Boletus edulis) and Albatrellus ovinus
Vegetable oil
Garlic
Chilli
Sichuan peppercorn
Star anise

Steps:
Let’s clean the freshly picked mushrooms
After cleaning, the mushroom can be sliced and preserved frozen in small bags
Wash the Penny Bun mushrooms (Boletus edulis), squeeze the water out and pan-fry with a pinch of salt
Heat up oil and fry some Sichuan peppercorns and star anise until fragrant
Let the oil cool down a bit, then add the fried penny bun mushrooms into it
Fry the mushrooms with low heat
Add a handful of sliced garlic and chilis for more flavour
Keep frying until dry and brown
Preserve the fried mushroom in oil
Same way, pan-fry the Albatrellus ovinus mushroom with a pinch of salt
Add oil to deep-fry with low heat
Add garlic, chili, Sichuan peppercorn and star anise
Fry until dry and golden brown, preserve the mushroom in oil
Perfect match for plain rice!
