Jenny Ryder I never drink alcohol, but occasionally use it in cooking. I always thought the cooking gets rid of all the alcohol. What are the benefits to substituting it with something different? Sorry if my English seems wonky.
Just made this, it tastes NOTHING like the canned soup (looking at you Progresso) . It's actually very sweet, needs a nice pinch of salt to balance it out. Soooo good.

The best onion soup is the one my family does with the beef stock left over from a chinese fondue. Not only do we season the stock for the fondue with thyme&stuff but it also has the delicious juices from everything we cooked in it. It's less waste, money-saving and delicious.

Hello French Guy Cooking! I finally got around to do this soup! I have a small period where i cant really eat solid foods, so i was looking for soups, and this one was a sure winner! I didnt go through with grilling the soup with cheese, but just eating it plainly with good bread. And it was amazing. I cooked it for 2 friends and the were also very pleased! And i didnt cry while cutting the onions, so no waste!!! Much love from Denmark!

This one also works very well with an additional slice of smoked cheese on top. I also usually put half of the crusty bread at the bottom, half at the top. mjummy!
just tried this and all i can say is WOW! so much flavour! ading the rest of the garlick just like it is in to the sope just befor putting it in the owen gave it so much more!
ha6464 why miss out so much flavour? adding wine or brandy to a dish adds so much flavour and once it’s cooked it has no alcohol left anyway. I always add a splash of brandy to this dish and it’s so tasty. I add red wine to ragout, brandy to peppercorn sauce, white wine to risotto because good cooking is all about adding layers of flavour!
The canned and boxed beef stock/broth are pretty bad. I like the Progresso brand the best but still not that good. I try to improve it by sautéing a lb (.5 Kg) 95/5 ground beef in a wide pan until heavily browned, then add 48 oz (1.25 L) of the boxed stock and reduce that by 1/3. Strain it and it's a passable beef stock. I also prefer to crumble the bread into bite size pieces. Comte or Manchego cheese works great and I like to mix it with a little San Joachin Gold cheddar from Fiscalini Farms, Fresno, CA. It's a cross between aged cheddar and Parmesan. Incredible texture and flavor. Very happy to find this channel. I really like Alex. Thanks Chef.
Me and my girlfriend tried the onion soup in Paris at the Montmartre, the painters plaza near the Sacré-Cœur. The soup was not that expensive and we loved it. The restaurant was also perfect. We overlooked the plaza and watched painters do there thing while we had soup and a bottle of wine. Would highly recommend if you are in Paris.

Dominix canned soup(e.g. progresso) lose a lot of flavour due to how long they are kept on the shelves, canned food is also built to last no tatse.
