As I mentioned in one of your previous videos, I've purchased a machiya in Kyoto and it's in the preliminary stages of renovation. My Japanese friends advised me to prepare the machiya for humid summers and chilly winters, so the design/remodeling team have focused on creating a comfortable space and floorplan with much natural light along with smart energy technologies. I also have a mountain home and the biggest challenge here is creating a warm interior during the snowy season, so I'm renovating this one in Japandi style -- combining Japanese and Scandinavian aesthetics along with Scandinavian energy efficiency to utilize solar energy for heating. I recommend “Yokohama Hakuraitei” medium hot curry made by Ebara. It is popular with many people because it is in flake form, not solid, so it dissolves quickly in hot water, and most importantly, it tastes great. The curry roux I mix with it is Golden Curry Spice made by S&B. This is ideal for Japanese curries that are weak in spice and need a stronger spicy flavor. But if you prefer a sweeter taste, you can mix Vermont Curry, for example.

It grows readily in humid and stagnant air, and therefore can be an even bigger problem in concrete structures than in traditional Japanese architecture. Keeping the house well-ventilated and eliminating areas with stagnant air will make it difficult for new mold to take root. If possible, place a few floor fans (senpuki), and open the genkan windows and shoji for some time every day - letting a breeze through the house will help. When placing furniture, please try to leave 15~20cm space between, to help air circulation. It looks like your house has suna-kabe walls, which are less friendly to mold than concrete or many wall-papers, nonetheless, leaving a few centimeters between furniture and the walls may help. When cleaning the house, I suggest temporarily moving furniture away from each other and away from walls, so that fresh air can get into the gaps, and cleaning tools can reach and disrupt any mold surfaces that may be starting to form. The kitchen, toilet, bathroom and laundry area probably have been made with materials that are mold-resistant; nonetheless these high-humidity areas can serve as breeding grounds for mold that can spread to other parts of the house. Also molds will eat into many organic surfaces such as paper, wood, clothes, rubber, and some types of plastic. Likewise, any food left exposed (not stored in the refrigerator, or sealed containers). To eliminate existing mold, acetic acid (sakusan) is cheap and effective, or white vinegar. I suggest dissolving acetic acid powder in water, spraying the solution onto any surfaces containing organic materials that look suspicious (or are not receiving good ventilation), letting the acidified solution soak into the surfaces for a few minutes, then wiping the surfaces dry. Regarding what you can do to reduce mold in the tea-room, it may help to place a few kilograms of charcoal or zeolite inside or behind / underneath the irori (brazier or hearth). Charcoal and zeolite both absorb moisture, and may dry out the air enough to stop the mold from growing. By the way, is Kikkoman's Tokunou the kind of soy milk that you are using? カビの1番良い予防は通気をして湿度を下げる事です。普段は風が通らない収納庫やクローゼットなどは、扉を2分間開けているだけで湿度が下がります。窓を開けられる時は室内の扉を定期的に開けるのが良いです。

木造建築はいいですね、木が呼吸しているのでエネルギーを貰えます。昔の日本家屋は家の建築材料に自然のものを利用し、家とまわりの自然環境が一体化し垣根がありませんでした。カビに関しては除湿剤が安くて、除湿機(2~3万円)は高いし、エアコンのドライ機能を使っても代用できます。「気/エネルギー」が欲しいのなら海に行くことがオススメですね、足を海に浸すだけでもエネルギーが体から満ち溢れます
