There is only one way once you armor digivolve you rookie you have to use a digivolution card that lets you digivolve even through armor state it is called armor crush evolution it is the only way to cancel armor evolution once evolved into armor stage. Of course if you don't want to use armor stage you just simply say no when computer asks you if you want to armor digivolve you partner. Also there is another way to cancel armor evolution once evolved that digivolution card is called De-armor evolution this card will dedigivolve you armor state digimon into rookie level so basically there are two way to cancel armor evolution and for these ways you need to have cards that specialise in armor digivolution or dedigivolution.

You can't.
You could say no when the game ask you to armor digivolve when you put you partner.
