Say I don’t want to ship priority, because I ship flat rate… could I get these boxes for free and just put them in a poly mailer with the shipping label on the poly mailer, since they can’t open the package …technically they’ll never know…

for light-weight items I don't use flat rate mailers, I do them in my regular poly mailers
