    HOW TO MAKE KETTLE FRIED CHICKEN
    ______________________________________________________________
    WHAT YOU WILL NEED:
    - 3-5 Chicken Quarters cut into sections
    - 2 cups Flour
    - 3-4 tbs baking powder
    - 2 tbs bbq rub (see recipe below)
    - Cooking spray
    - 1 cup Milk
    - 1 tbs vinegar
    - 2 eggs
    BBQ Rub we used to season flour:
    - 2 tbs Kosher salt
    - 2 tbs coarse black pepper
    - 1 tbs garlic powder
    - 1/2 tbs paprika
    - 1/2 tbs chili powder
    - 1/2 tbs cayenne pepper
    STEP #1
    To prepare your kettle fried chicken start by mixing together in separate bowls, your wet ingredients and your dry ingredients. Once your station is ready, dip your chicken into the flour mixture, then into the egg/milk mixture and then back into the flour mixture.. Repeat this step until all your chicken is breaded.
    SETP #2
    With your Chicken breaded set up your grill for cooking indirect at around 400F. Once your grill is up to temperature, place the chicken onto the grill opposite the coals. Add in a couple small pieces of hardwood for a kiss of smoky flavour, and then close the lid and begin cooking - we will have a total cook time of around 45-50 minutes.
    STEP #3
    After 20 minutes of cooking open up the grill and spray the chicken with a light coat of cooking oil and then flip the chicken and do the same on the bottom side. Next, close the grill and continue cooking for an additional 15 minutes. After 15 minutes, open up the grill one last time and flip the chicken one last time and continue cooking for another 10-15 minutes. Once your chicken is golden, crispy and reading between 175-195 you can remove them from the grill and enjoy the feast.

      @@JL-qk2sk I use the ‘one-cal per spray’ type but any oil that can be sprayed on should do the trick. Don’t be upset if the first try isn’t perfect,it takes a bit of practice.

    I've just bought a Louisiana BBQ grill with the turn handle for raising and lowering the charcoal tray. I've never ventured with chicken but oh my days. This video has converted me.     There's a buffalo chicken thigh appetizer on the menu at McGuier's in Florida that reminds me of this.. I'd add some buffalo sauce to the wet mix and maybe some cornstarch to the dry and boom, perfect crispy buffalo chicken. This is a great video/recipe. Looks and sounds delicious.

    I havent tried on a charcoal grill yet but i do use the same technique in my home convection oven. Comes out great. I do brine my chicken overnight (which i recommend),because you do lose moisture in dry heat.

    Man you can hear the crunch. Im in love with fried chicken. But stay away for the most part. The occasional KFC STOP helps with the withdrawals. I make it at home but the mess is nuts. I love anything I can achieve on the bbq. This so much cleaner than frying. Excellent job. And even on the affordable Weber. 👍👍👍👍

      If you can cook bone-in thighs and legs, you can cook bone-in breasts. Grill them to 165° and remove from heat. White meat is done at 165°. Dark meat requires higher internal temperature, hence the higher temps he mentioned in the video.

    FYI, this also works great on a pellet grill. It's a fantastic method, better than regular fried chicken IMO.

      I added a touch of wood to give it a kiss of smoked. I think with this recipe, less is more.

    Thank you for cooking the dark meat to 185, texture of the meat is way better at that temp than 165 for the dark.

      yeah i agree.. 185 is my preferred for dark meat chicken.

    Dumb question but what is the Vinegar used here, I'm in the UK and our default vinegar is malt vinegar. Is that what you have used. Going to made this today if I can get an answer then many thanks.

    I have only a gas grill with a smoker box. Would this recipe work on a gas grill with the chicken in the cool zone?

    The bbq rub recipe posted doesn't include onion, but you mentioned it verbally in the video. I'm sure it would be inconsequential, but was curious if you used onion. Thanks for the recipe; I'm making it right now. Keep up the great videos!

      Hey man. I’ll look into that. Usually I match the onion and garlic. It says 1tbs garlic so it was likely 1tbs onion powder as well.

    I did this cook yesterday. The skin did not crisp up. The breading was crispy but a lot of it flaked off. I used my slow and sear.

    spraying with the cooking spray was a great time. Baking fried chicken after you've done the dredge and dry ingredients has a bad effect of leaving the ingredients dry and discolored.
    Grilling in this fashion is akin to baking so the same rule would apply in an oven. You can see from your product there are some bits which are a bit lighter than others, likely due to lack of spray. Overall though, excellent job and you were enjoying that way too much!! Thanks for the video
