Get tortillas, spread on a thin layer of cream cheese. Layer the jalapeños on top of the cream cheese and roll up the tortilla. Cut into pinwheels. Enjoy!
I've canned cowboy candy several times, and am addicted!! I use that 1870's Homestead recipe, and you will need to do as she suggests.....make more than one recipe...it won't last very long!!! One of my very most favorites to can. We eat it on all meats, in rice, beans.... The sky's the limit. It's just yummy, even by itself! You won't be disappointed!!
I slice my peppers into rings like you did. I’ve also made it with Serrano peppers for a slightly warmer version. My personal favorite use is in a nacho dip with cream cheese, salsa. I like to save the syrup and use it as a dip or glaze on salmon (even for crazy stuff like dipping cheese and crackers in). The cowboy candy itself is definitely not as hot as if you were trying to eat the jalapeños by themselves. Yum! Now i want to go home and have nachos! We especially enjoy it with fish.I’ve even chopped it up and added to bread dough along with shredded cheese. Before final rise, spread dough out on board and chop up into small pieces about half size of golf balls. Sprinkle cheese and jalapeños over and mix back together. Put into bread pan. Rise, bake. Soooo good! Make your morning toast with that!
I can't do heat, so i take out all the seeds and leave out the cayenne. I cut the sugar at least in half. I also did some and added zucchini and onions, the zuke takes on the flavor, it uses up zucchini and makes the CC go farther. I too, can up the leftover brine to add in another recipe, or use to can up more cowboy candy.

I used homegrown jalapeños for my cowboy candy. I can’t believe the price per pound at the store is 4.99. Guess I will definitely needs more than one plant next year thats for sure!

I made this for the first time this summer using Becky’s recipe from Acre Homestead. When I saw her video it was the first time I’d heard of it. I’m not a jalapeño fan but my husband is so I made it for him. He loved it too! Seeing the ways some of the viewers have mentioned in the comments is fantastic. I would bet this would be great on deviled eggs, Coney's, BBQ, in grilled cheese,etc. The possibilities are endless. I would never have thought to can the left over brine - great idea!

So I made cowboy candy this past summer. This winter we discovered crack dip which is ground sausage cream cheese and rotelle tomatoes. Adding the crack candy to that dip was a total game changer!
I love cowboy candy. I always wear gloves when cutting the peppers. I save extra brine and use it as a marinade for chicken. I love all your recipes. So glad you joined Canuary as I don’t know if I would have found your channel if you hadn’t. Looking forward to all your upcoming videos.
I am a bit of a spicy pepper wimp, so I remove the seeds when I make this. We will have snack dinners instead of a prepared meal sometimes and this is always on the menu. And I love, love the brine/syrup! I use it for the usual additions to marinades and sauces and dips but my absolute favorite way to use it is to combine it with fruit to add to my kombucha's second ferment. When mixed with chopped dehydrated peaches it is to die for.
I de-seed about half of my peppers and chop when making this. I also make mine plain (no spices) I love the flavor but not so much the terrible heat lol...but my kids absolutely love this on any meat!!! it's easier to spread if chopped.
I'm a sissy when it comes to heat so I passed on this video but came back to it since you always make them so much fun to watch but now I think I'm gonna have to make this and skip the seeds & cayenne. Great recipe, I use a variety of colors. Jalapeños come in yellow, purple, orange and if you leave them to ripen further they will turn red. Love cowboy candy but I reduce the sugar and can the leftover syrup.

What timing! I just made these actually for the first time as well. Because I brew kombucha I used some kombucha vinegar as my vinegar. What prompted me to actually do this, was a meal I needed to complete. I made fish sandwiches complete with everything but tartar sauce. So because I had no relish I substituted the finely chopped cowboy candy, and replaced the lemon juice with lime and it was perfect!!!! So there's another use for these delicious sweet little peppers. I would include these on any charcuterie board as well. Edit: I made a basic b!+ch version apparently, but after seeing your recipe and taste test I'm definitely making it your way. I have a bunch of hatch Chiles I need to use so I imagine it will either end up on some andouille sausages or in some curdito for when I make pupusas, or on top of a blue cheese bacon cheeseburger (I am inspired to try because I love blue cheese bacon wrapped dates). I use the tops in vodka for a tincture. Oddly, I enjoy a dropper full in a cup of coffee. What better way to get medical properties in me😊❤ By the way if you enjoy pickled Eggs, try picking your eggs in cowboy candy. Delicious!!!❤

I add cumin and turmeric (honey or raw sugar). Together on salad or burgers becomes a tasty anti-inflammatory treat. Part of my MS treatment regiment for myself. P.S. wear gloves cutting up that many...

I'm gonna edit my comment, and say that you could probably use that left over brine, in cocktails. Bloody Mary's or even a spicy margarita... Or drizzle it on fruit salad, that might be a nice summery side dish.
