"Stalag 13, Col Hogan here." What type of OPSEC are they conducting? I know it's a fictitious comedy, but what happened to their codename of goldilocks?

I think, just like they did with the German, they translated it so people can understand it instead of wondering what the code is supposed to mean.

That episode when one eyed general in black uniform arrives at stalag 13 with secret documents pertaing to battle formations
Hogan's heroes take pictures of that documents and hide it in the video camera that would blow up if opened without code
And sends it to England along with absconding POWs from other camp , masquerading as german cameramen in uniform

A 19 year old high school senior? That would make the guy have been left back 2 times, - or at least one, providing he went into grade school a year late because he didn't turn 6 years old until the end of his classes enrollment period. But, who knows, - the army did allow a lot more crazy things to happen prior to creating a gazillion new laws under the UCMJ after the United States withdrawal from Vietnam!
If Hogan had not specifically said the guy in his head was a HIGH SCHOOL SENIOR, - anyone could have made the leap that the kid was some sort of genius, because nearly all U.S. Officers had to have attended a minimum of 2 years in college prior to joining the service to hold the rank of 2nd lieutenant in the US Army, even back then! The only other way to get a commission as an officer was to be the son of a Senior Officer, or a federal official in government. All that changed almost immediately after Jimmy Carter took the oath of office as president in 1976, and he pointedly ordered his Chairman of the Joint Chiefs of Staff to dig into ALL services recruiting methods, and the uniform code of military justice, and, make it impossible for any Male under the age of 18 to serve, and also, remove all loopholes which permitted American men with minor criminal convictions to have their records expunged through honorable military service!
Right up through the Vietnam War, scores of young American men had successfully turned their lives around by enlisting, mostly into the Army or Navy, Though there were MANY of these "Volunteers, " who chose the Marine Corps , primarily because of their own roughly evolved attitudes, and arrogance which only Marines could lay any righteous claim to!
Jimmy Carter was an officer during WWII, and because his education was in physics, he not only NEVER SAW combat, - his DESK JOB during the war years didn't mean a dammed thing. It wasn't important at all, and no one could have counted on Carter to help anyone during an enemy attack! I'll bet that Carter never even fired any weapon , ever, and he may as well have been classified as missing in action for all that he learned from being appointed an officer during WWII!

Aren't kids the age of 16 allowed to join with parents approval? I'm pretty sure high schoolers age 16+ can join as long as they have parents approval and pass the physical requirements.

I think when LeBeau was firing the rifle at the various objects to make the germans think he was an skilled animal hunter. The gun he was using was a garand rifle or a garand carbine rifle. Which is an American rifle. No way would Sgt Schultz be issued an American rifle.
