    Chef, that looks good. I am brazillian, but will not join the hate train, I understand that this is your take On the dish, and I bet it tastes amazing, but as a fellow cook, I will say that the techiniche is different from the original, you see, the idea here is not to poach the fish, but "steam" it. Next time try this, put more of each vegetable, more onions, more Bell Peppers and tomatos, and lay it down On the Botton of the pot, add the coconut milk (and palm oil, if you wish) and than the fish over the vegetables. Cook it with the lid On and dont mix it, keep it in layers until the fish is fully cooked. And then enjoy! But Hey you are the TriBeCa of your brazillian moqueca. So who cares =). Cheers!

    You did it very well, chef John! I am from Brazil and I make Moqueca every month and it's ok to change ingredients once in a while or it gets boring. BUT, of course, keep the coconut milk and the cilantro! Or it can't be called a Moqueca. The rest of the ingredients you choose, be free, be happy! I deeply love your channel!

    Been a vegan for approaching a year now and I'm not planning on stopping but I still watch and support all your videos, almost obsessively. Watching someone cook well is soothing to the eye, like watching someone paint. Keep it up

      Blacktician be careful! it's a slippery slope. I was a vegetarian for ten years and after getting really into TH-cam cooking videos I have backslid into meat eating. This is my cautionary tale...beware...BEWARE!!

      If you're not tired yet of tofu-in-everything, it would probably make a good substitute for the fish in this recipe. I'm not even vegan, and I would eat it.

    Nice effort! I'm brazilian and to be honest i prefere moqueca almost like you did (i dont really like to much spice). I dont understand people complaining about tradicional way to cook. We do the same thing with paella, sushi (we eat sushi with chocolate for the love of god! Haha). As always, we enjoy it!

    Something I can eat! I'd love to see more vegetarian/ pescatarian recipes please, often it's difficult to replace the meat with vegitarian substitutions because they're often dramatically different in texture and cooking requirements. Also, Chef John you made me do it, I love eggs with Cayenne pepper on now, I can't go back to just salt and black pepper anymore.

    Bless you, a delicious dish. Following your expertise and the care in the preparation of food has led to me losing weight! Too many American's choose fast and quick but preparing quality food dishes at home is a much smarter 'weight wise' choice.

    Guys, try to find Palm oil and put couple spoons in there. You'll love the taste, changes everything, this is tradicional here.

      Food Wishes I think because most people don't have access to fresh seafood there are many who don't think fish is appetizing. In my experience, my opinion of seafood goes up and down depending on my location.

    To all the butthurt brazilians saying this is not our beloved fish stew, pay attention at 0:09 right at the beginning. Enough said, its HIS twist on this recipe. Chef John knows what he's doing, it's a great recipe if not better than the traditional

    I was hoping for a Brazilian recipe video for so long! And don't worry the southeast version of moqueca traditionally does not use palm oil! And I prefer it that way!

    Looks really good! If you ever find palm oil, use it at the end to finish the dish instead of frying the onions in it, the oil has lots of solids that can burn and leave a bitter taste.

    Nice take on our dish chef John! Would like to taste it! Bur I must say that we also use bell peppers, another cut of fish (the perpendicular to the length of the animal, don't know how you call it up there) with bones and skin on, and palm oil, it makes moqueca tastes even better! You can make moqueca of a variety of fishes, shellfishes (shrimp is the king here), eggs (!!) and even plantains (!!!!). Been a subscriber for years now, you are an excellent teacher.

    I find it interesting that (subtract the weekday selection of fish) this seems to have a similar component to a lot of Thai cuisine. A mixture of salty, sweet, and spicy seem to have prevalent features in both cultures. A further point as to how food is one of the best ways to show just how similar we all are.

    I am Brazilian, and indeed, this is a adapted version, which is fine and actually amazing =)
    seems really good, and I would only potentially not at Paprika since this not what we usually add in Brazil, the rest. =D I love when our Brazilian dishes are recreated by other countries, it is this amazing mixture and remix of dishes that eventually might create the new Feijoada, the new Jambalaya, or all these dishes that were born out of cultural exchange.

    I'd love to see your take on something from traditional Finnish cuisine like Karjalan piirakka (Karelian pasties which are rice "pies" with egg butter - my personal favorite Finnish speciality) or Karjalanpaisti (Karelian stew). Although the later is just beef and pork stew flavored with onions and allspice berries, not much to modify! Or how about kalakukko, which is sort of like a shooter's sandwich but with vendance.
