    I love the carrot raisin, etc salad. I question how many people have fennel and hazelnuts in their house on a regular basis. That is the true beauty of salads - using vegetables you normally have available. I have had to search for fennel in grocery stores, and, although we enjoy it, it is expensive, and only available at one store nearby. Walnuts, almonds, and pecans all come in large bags and I always have them on hand. Hazelnuts come in small , expensive containers. So, I might make this with celery, walnuts, and a touch of fennel seed.

      Hope you've tried this! I used what I had: finely sliced celery, toasted walnuts, fennel seeds, finely minced red onion, and red wine vinegar. Simply awesome! Thanks for the delicious recipe makeover.

    Creamy Carrot Salad
    2 large carrots, grated (2 cups)
    1/2 cup Chopped mix hazelnuts
    1/2 cup Romain lettuce, diced
    Orange dressing: 1 Tbsp Orange juice concentrate and 1 cup mayonnaise

    I grew up eating the disparaged mayo/shredded carrots/ raisin salad and love it. This one looks interesting and I may give it a try.

    Hat's off to Becky! That's a beautiful rework of the old shredded carrot salad. I think the combination of carrot and fennel is going to be mind blowing! Can't wait to try this one 😋

    That mayonnaisey carrot salad with raisins and pineapple is my favorite salad, and i look for it when i go to Buffett restaurants. I will definitely try this salad also. It looks like a winner.😀👍

    I'm invited to a potluck cookout at the end of June, and had actually considered taking an old fashioned carrot and raisin salad. This looks better; just different enough to be unexpected, without being so weird that it's offputting. I think we have a winner!

    I have leftover hazelnuts from making biscotti. I know what I’m going to use them for now!
    Update: I just made this. It really is a fantastic salad! I’ve never had anything like this. You get a firework of flavor and texture. The carrots and the dressing impart sweet notes while the hazelnut provides texture and that nuttiness. I think the key is the fennel, however. It cuts through at the end and really balances this dish perfectly.

    OH MY GOOD GOSH GUYS,.. I HAVE BEEN DYING TO GET THIS SALAD..I WAS SERVED IT IN THE HOSPITAL AND I ABSOLUTELY LOVED IT, SO BECAUSE I CAN'T FIND IT ON SALE ANYWHERE OUTSIDE ,I WAS JUST ABOUT TO GO BACK TO THAT HOSPITAL TO BEG THEM FOR THE RECIPE,.     The Northern Chinese use the carrot top in dumplings, like pot stickers, and the Koreans use it in kimchee. I guess it’s very nutritious.

    I actually like carrot salads- sorry. But, this sounds interesting- and easy enough. I'll definitely have to try it.

    Here are the exact ingredients/measurements:
    * ¾ cup hazelnuts, toasted and skinned
    *
    * ¼ cup extra-virgin olive oil
    *
    * 2 tablespoons white wine vinegar
    *
    * 1 tablespoon honey
    *
    * Salt and pepper
    *
    * ¼ teaspoon grated orange zest plus 1/3 cup juice
    *
    * 1 fennel bulb, stalks discarded, bulb halved, cored, and cut into 1-inch pieces
    *
    * 1 pound carrots, trimmed and cut into 1-inch pieces
    *
    * ½ cup minced fresh chives
    I just followed the video for the instructions, but it’s basically:
    1) Make the dressing
    2) Toast the hazelnuts and blitz in food processor until it’s powdery with some bigger chunks of nut.
    4) Cut the fennel/carrot into one inch pieces. Blitz the fennel 10-15 times ish until they are fine pieces. Process the carrots for 20-30 seconds until it resembles tabbouleh.
    5) Combine carrots, fennel, half of the hazelnuts and mix with dressing. Top with more nuts and the chives and enjoy!

    We tried this recipe and it was delicious! The balance of flavors are perfect! It's a keeper, although I will still make my mom's version as well!

    This is a very different carrot salad, indeed; at least, from any I've heard of. I've never eaten fennel and this looks like an interesting way to try it.

      I absolutely hate cilantro, but since it is in so many recipes, I am sure you should be able to find a salad with it by just googling “cilantro salad”.

    I bought the giant ATK recipe book because I wanted to try this recipe in particular… good thing I had this video to check it against, because the printed recipe makes no mention of honey in the ingredient list. I hope this is a one-time error, because I don’t think every printed recipe has a corresponding video…

      Anything that toasts well would work. Almonds, peanuts, walnuts... I don't think I would go down with Pecans for this one though.

    This is one of those recipes where I have to shake my head and ask WHY ?
    Why do you feature a recipe that includes an ingredient that most people who are just average home cooks don't have on hand or can't get easily? Yes those blanched Hazlenuts?
    There are three major grocery chains close to my home and none of them stock Hazelnuts of Filberts. That makes my source for these Amazon and the quality I'd have to buy and the cost I'd have to pay doesn't justify the small amount used for this recipe. Sometimes professional chefs who have access to anything they need, forget not every ingredient is available to the average home cook. That seems to be the case this time.

      I got raw hazelnuts at Whole Foods today. Pan roasted them and then just rubbed the papery skins off. I used about $4 worth of nuts for this salad.
