About Michelin Sushi Chef Tetsu:
His family owned a sushi restaurant in Saga Prefecture in the Kyushu region.
Chef Tetsu grew up close to sushi and Japanese cuisine from a young age.
He later went on to pursue a completely different career path, but when his father closed the sushi restaurant, he vowed to revive it.
In November 2007, he opened his first restaurant, "Yamasa Shoten Sushi Yoshi" in Saga.
As a consequence of the restaurant's popularity in Saga Prefecture, Michelin researchers visited the restaurant.
The restaurant was listed in the Michelin Guide twice. (2014, 2019)
In June 2019, he opened "Sushi Yamasa" in Nishinakasu, Fukuoka, offering the best time and sushi to customers from home and abroad in a restaurant overlooking the night view of Nakasu.

    I tend to spill drinks and sometimes over do it. They hate when you vomit on their fish window thingy. I blacked out at our local sushery and took a swing at the fish barista, he was a handful.

      Omakase = You eat it as it comes. You add nothing. But if you're ordering specifically what you want, feel free to eat it how you wish.

    Nice reminders on manners mostly. Hearing someone saying thank you is almost never heard these days. It seems many of the commentors seem to miss the point of fine dining and authentic Japanese sushi restaurants. It's a chance to reboot your mind, you take an hour to relax in a quiet enviroment, and dine on subtle tasting treats. I thought expensive French wine was a waste of money, until a friend ordered a $ 100.00 bottle of White Burgundy, this wine was an amazing experience like no other wine I had ever had. If you can have dinner at Daniel in NYC, it's one of New Yorks best restaurants. They will show you what fine dining is. It's not inexpensive but quality and value sometimes are costly.

      Nothing Americans do compares to what Japanese and Chinese both do when they tour other countries. Extremely annoying and impolite people when you're "out and about". They're always the ones with the selfie sticks and there's always 50 of them. (I have a lot of experience backpacking abroad and have seen it a lot). I don't know why they need to go on tours so often and can't just walk around and take their time.

    To all the pissy negative commenters here: I can’t imagine you’d ever find yourself in a place like this to begin with (if they even exist where you are) and likely couldn’t afford it if you did. Now you know the expectations so if this doesn’t work for you, just go somewhere else. Or stay home and eat whatever you want however you want. Nobody is dictating anything to you and this is part of the experience. What’s the big deal?

      I find that a lot of people nowadays don't appreciate the time it takes for the sushi chef to master his art. At a high end sushi place, the chef has probably studied sushi making for a decade or more and is very proud of the product he serves (as they should be. A lot of folks just seem not to have manners anymore

    #1 Watch off - negative, buy quality table material. In nearly 5 decades of living I've never come across a table damaged by a watch band. #2 eat ASAP - the customer will eat when ready. This isn't their mommas house, the customer pays for service, not silly demands from the chef. #3 hands vs chopsticks - personal preference, should be left to the customer. #4 personal belongings all over table - agreed, space is limited in these places. #5 ask to take pictures of food and staff - of food should be fine as long as staff aren't in them, you dont need foods permission. Agree with asking to take pictures of staff. #6 loud conversations - totally agree

    How is any of this too strict? And why are people offended at being asked to conduct themselves in a particular way? In this setting people are dining for the experience and culture as much as the food. The chef’s suggestion to eat quickly is so you get the most out of his efforts. Not disturbing your neighbors, not crowding the counter with personal items, removing things that could damage property that isn’t yours…none of this is too much to ask.

    Strange fact: I visited a sushi restaurant before I got married (she was Indian, which is apparently Asian), and I was using chopsticks but she didn't know how. I took a bit of amusement from that situation.

    Rule #1: Customers give money in exchange for goods and services. Rule #2: Businesses are successful then they mind their own business, not imposing on customers nor divulging their own details. Dont get carried away in telling customers how to eat, unless you are also willing to tell customers where you keep the money, how much, etc.

    I learned to eat sushi with my fingers. Years later I saw people using chopsticks, but I never did and still don’t.

      Nikiri is soy sauce z morin, shugar and sometimes reduced with katsuobushi flakes.
