My channel is you watching the results of my 2am thoughts of “I wonder what would happen if I put A with B?” The answers lean heavily towards cake, and my ongoing quest to find a good meat substitute. I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.

Happy new year! Let's welcome 2025 with these incredible Chinese spring onion pancakes. Yes, they do take a bit of work, but they are very simple to make, and well worth the time. They're also super cheap; under $1.15/£0.91 for six pancakes! Perfect for those of us who've perhaps overspent during the festive period

Spring Onion Pancakes Ingredients:
Dough:
300g (2 cups/10.58oz) Plain (AP) Flour
½ tsp Salt
120ml (½ cup/4.05fl oz) Boiling Water
60ml (¼ cup/2.02fl oz) Cold Water
Filling:
50g (⅓ cup/1.76fl oz) Plain (AP) Flour
½ tsp Salt
60ml (¼ cup/2.02fl oz) Sunflower Oil (use any fat you like)
100g (1 cup) Spring Onions/Scallions (Diced); this worked out at 1.5 bunches for me
Dipping Sauce:
¼ tsp Fresh Ginger (grated)
¼ tsp Toasted Sesame Oil
½ tsp Kicap Manis
½ tsp Superior Dark Soy Sauce
½ tsp Black Rice Vinegar
3 - 6 tsp Oil for frying
