May I offer some comments intended to be helpful? Wet your hands so the dough does not stick to them and get stretching and folding properly. A bench scraper just doesn't get the stretch done enough. Don't worry about the dough sticking to the worktop. Just scrape it back into the dough occasionally. Gluten prefers to stick to itself more than anything else. So as it develops the dough gets a lot less sticky. You have far too much flour on your bench and that is being folded in dry to the dough. It is throwing your hydration well off. At 5:02 your gluten is still very undeveloped. It is crucial to develop it fully for good loaf. By this stage it should be smooth and springy. The loaves can go straight from the fridge to the oven. That is the usual way of doing it. Don't press the knife down of the dough. It dis not score it but it did de-gas is a bit and that is the last thing you want. Pre-heat the casserole dish - You will get a much better oven spring. Best of baking to you. From an old baker ;)

I do appreciate that. I love how the bread turns out, so I haven't worried about not getting enough stretch. What will it change if I do stretch it more? I mostly just made this for my friends who were asking how I make sourdough:)

@@projectbiggs7694 Oh, I am not being horrid or hyper critical. It's just that your baking is not so hot. Full on? Gluten molecules are tightly wound proteins. Coil folding, or whatever method, stretches them out. They link up into sheets and the folding also folds the sheets offer to make a folded gas trapping network. Any baking school hammers this home as the fundamental root of geed baking. It is worth a try - You will be amazed at the improvement in the crumb and mouthfeel of your loaves. Wishing you well.

Hello, I made three bricks based on your recipe. Two were I used the asphalt emulsion of 10% To water and soil. One brick I used the same water to asphalt plus pine shavings. I need a stabilizer to keep the bricks from eroding since my potential build will be in East Texas where its more humid. What are your thoughts. Adobe bricks are not heard of here. Also how long did you keep your bricks covered. My bricks are 10x10xx4

Really really interesting. Great job and thanks for sharing your experience. I have two questions if I may ask: 1) what is the climate in your country? Hot and humid? Dry? 2) aren't you afraid of all that wood rotting because it is in touch with that earth bricks which are rather higriscopic? I ask you these questions because I'd like to replicate in Italy with self made bricks and my climate is cold (-5C) in winter and hot and humid in summer. Thanks in advance for your kind reply.

Hi, Thanks for watching! No I’m not concerned about the wood rotting because it’s in contact with the adobe. This is a very very old technique that has worked for 100s of years. Most the oldest building in the USA are Adobe building. We have a lot of historic adobe buildings in my state that are around 150 years old. I’ve never seen any documentation that being in contact with the adobe will cause the wood to rot any fast than normal. As long as the wood is kept dry there should not be a problem. The wood on my home that I’m most concerned about are the Posts for the porch where they come down to the concrete. To manage this, all the posts are off the concrete 2.5 centimeters on a metal base. I’m also concerned about the wood that is exposed to the sun and rain. This we seal with linseed oil every year. Our climate here is high desert mostly dry. We average around 19% humidity. Our temperatures range from -12C to 41C. Moisture is the enemy to adobe, but this is mitigated with over hanging roof lines. There are also sealers you can spray on the adobe. Another really good way to handle moisture is with Lime Plaster/Lime Washes. Check it out on Wikipedia.

Твёрдые основания стен прослужат более ста лет, а вот деревянные опоры придут в негодность гораздо раньше. Так строили в средние века. Так как не было других вариантов. Сейчас то зачем сново наступать на старые грабли?

You can't have a wood supporting system in a brick wall, it would be a lot better to let the adobe carry the roof. The wood beams get wet at some point and start to rot

Amazing video to watch from Poland. On the outside wall did you put stucco or you left uncovered brick? And if stucco was put on the outside wall would that help with keeping dry walls in the rainy season? Also would stucco help with summer heat keeping cooler inside and winter lower temperatures keeping warmer inside?

If gas behaves the same as water, by decreasing the pipe diameter the pressure does not increase. The pressure stays the same however the velocity of the fluid is what increases. Either the pressure from the source is already too high, or the velocity of the fluid causes problems and thus the need for a reducer valve. Thanks for the video!

I recently scored on triple pane glass and want to build a green house. Should I use asphalt emulsion mix, Portland cement, sand or straw with the clay dirt? I have watched every video out there and I still know nothing (ha ha!)

Hi, sorry I haven’t logged into Facebook for a while. You will probably have to do some experimenting. You don’t want to high of clay content. But with higher clay content soils you would traditionally use straw and or lime. Try finding some sand to mix in with it. Then make some small batches and make a few bricks. Try to control the rate at which they dry. Try to slowly dry them to help prevent cracking. Reduce the percentage of clay by adding more straw and sand until you find the right mix.
