Our homestead journey started in 2017 when he bought our current property. We had dreams to be free to do things like have chickens & garden which were not allowed in our HOA neighborhood. Little by little we have added more animals, bigger gardens and tried a lot of different things. Some were successes, some not so much. Joe works full time off the homestead while Darcy is on the homestead full time raising & homeschooling our kids, preserving the food we grow/raise as well as bulk produce sourced locally. Darcy also does the majority of the TH-cam and other social media content creation. We are Christians, we love Jesus! We desire to steward well all that He has given us, our lives, our family, this beautiful property and the animals we have. I also make chicken meatballs adding parmesan cheese and ricotta cheese. Have you ever tried freezing parsley. I chop my curly parsley and put it in ziplock bags in the freezer. I use it just like fresh parsley all winter long.

My fav recipe for using up canned potatoes. After you have rinsed and drained the starch off the potatoes, pat dry. In a one gallon freezer bag, add 2 tablespoons olive oil. Place the potatoes in the bag and shake, then add one envelope of powdered onion soup, or your own if you make it. Shake well again and air fry until crispy. Amazing!!!!

I’m making beef fat tallow for the first time. I have marrow bones in the fridge an want to roast those and add the drippings to my beef fat tallow. I hope that’s ok. It seems like a no brainer but I’m new at this so you never know.
@DennieDiFilippo-hg9mn yes, you can. There will be more of a beef smell so if you’re going to be making body products with the tallow you may want to stick with plain suet to make the tallow.

Too bad about the greenhouse but as I always say, things will work out. The turkey dinner sounds delicious. Was wondering if you make your own aprons. They provide ample cover coverage across the chest area as that's where I get the splatters and most of the store bought ones are a much narrower in that area.

@@KristelLeaner we raised our birds on pasture starting at 3 weeks 4 weeks if it’s still a little cool. That’s less money for bedding. The remainder of the 4-5 weeks they are on pasture and moved 2 times a day so that cost us nothing. We butcher our birds ourselves so we have no cost their except the bags we put them in. So our cost is the chicks (sometimes we get a really good deal at the local farm store), some shavings for brooding, the feed and the packaging. Our birds typically average 7 1/2 pounds. Some are as small as 6 pounds but we’ve had a few monsters that were a little over 11 pounds at 8 weeks.
