Mrs. Salisbury has a BA in Family and Consumer Science and is a “distinguished” veteran high school teacher in the inner city of Seattle. She was on her Dad’s payroll in 3rd grade at the Tall Pine Restaurant in North Idaho and worked with him past high school. She was the chef at a private children’s camp on Orcas Island in the San Juans, during the summers while attending Western Washington University. Mrs. Salisbury gives thanks to all the marvelous cooks in the family, especially Gram, “Mimi”.

How to Make Mediterranean Chicken
Mrs. Salisbury’s Mediterranean Chicken
Recipe and Instructions:
Bake 350 for 60 minutes
Serves 4 - 6
4-6 boneless, skinless chicken breasts
3 crushed garlic cloves
1 T dried oregano
2 T dried parsley
½ t salt
½ t black pepper
½ C red wine vinegar
½ C olive oil
1 C dried organic prunes, pitted
1 C dried organic apricots
1 C Kalamata olives, pitted
½ C capers with a little juice
3 bay leaves
2 T packed brown sugar
1 C Chardonnay wine
Rinse and pat dry the boneless, skinless chicken breasts and place in a 9 x 13 x 2-inch-deep baking dish.
In a medium sized bowl combine garlic, oregano, parsley, salt, pepper, red wine vinegar, olive oil, prunes, apricots, olives, capers, bay leaves, brown sugar and Chardonnay. Stir and pour over chicken in baking dish.
Bake at 350 degrees uncovered for about 1 hour until chicken is done.
Slice chicken and serve with sauce over long grain rice or serve cold as an appetizer.
(if preferred, cover and marinate over-night in the refrigerator) …may need to bake 10 min longer

Gosh why all the plastic, encouraging everyone to use more when you should be washing your hands and cleaning down the work surface or use a board. Good morning Mrs Salisbury. Good Scones are very illusive. This one reminds me more of a savory biscuit to be enjoyed with company warm out of the oven. I like to search out the shop that bakes the morning goodness of diced peppers, cheese and bacon or sausage bits into their Scones, served with a good cup of coffee.

Here is my refrigerator jam recipe: 1 Granny Smith Apple 1T lemon juice 1 C sugar 2 C berries (cut) 1C water Quarter an apple and core. Grate apple and peeling add lemon juice and water Bring to a boil in saucepan for 7 minutes (this will make pectin to thicken jam) Strain into bowl In the same saucepan, add pectin from apple, 1 C sugar and 2 C cut berries Stir with wooden spoon. Bring to a rolling boil that cannot be stirred down and then boil for 2 min. Pour into bowl and let cool. Refrigerate after jam is cool Enjoy! Mrs. Salisbury
