Gums which are removed in Water degumming stage, pose a critical disposal problem. To overcome this, gums can be dried and converted to Lecithin. Deodorization is the final stage of Oil refining. It removes odoriferous matter, free fatty acids and other unwanted components to produce bland and stable oil.

One of the key steps in the refining process is the elimination of impurities from crude vegetable oils, especially the phosphatides or so-called gums. They need to be removed for two main reasons: they are responsible for high refining losses and they decompose, darken the oil due to their thermal instability.

Oil undergoes Pre-treatment with Phosphoric acid/citric acid and the pre-treated oil is given a pre-determined retention before going to the Bleacher. This step splits soap and traps metal contaminants.
