Kunafa Recipe ! Don’t just save the recipe do follow @first_choice.01_ ✨ 200-250 grams of konafa Dough 250 grams of mozzarella cheese 55 Grams of salted butter 150 grams of Fresh Cream (Thick- I have used Rainbow ) 6.7 inch Tart pan (or) any convenient pan Sugar Syrup: 1 cup water 1/2 cup + 7 tblspn sugar granulated 1 tspn lemon juice ( fresh) Method : Type 1 - Any non stick pan /Tava Type 2 - oven ( I have tried both the methods and both were successful and tasted Heavenly) Take the tart pan Grease it butter completely Cut the Kunafa dough into small pieces And divided it into two halves for bottom and the top coverage Add in salted butter ( Melted) and give a nice mix Add 4 tblspn of Ghee Layer it on the pan Add a layer of fresh cream Add a thick layer of mozzarella cheese over Add in the 2nd half of Kunafa dough again Take extra 15 grams of Kunafa dough cut it ! just add 2 - 3 tblspn ghee alone… mix add that on the top again. Preheat for 10 mins Bake @ 180*C / 356 F for 10-15 mins Until crispy / crunchy top! And when making in Tava / non stick pan ( either u grease the pan or make it in a tart pan and flip it in the Tava keep the fire flame on low… for 10 mins until it’s crispy… and then flip it on the other end and keep it for 10 - 15 minutes) Add in Sugar Syrup! Add 1 cup of water let it boil Add in sugar Let the sugar melt completely.. add 10 drops of lemon Let it cool down and add it over hot Kunafa ! Enjoy. Homemade Fondant Recipe! @first_choice.01_ 1- 2 kg Powdered Sugar 1/2 Cup + 2 1/2 Tblspn Glucose syrup 2 Tblspn Gelatine ( Halal - Greens) 1/4 cup of water 1 1/2 Tblspn Glycerine 1 1/2 Tblspn ( unsalted butter - Lurpak) 2 1/2 tspn CMC (or) Tylose powder Method: Microwave water and gelatine for 40 seconds Add Glucose Syrup and mix well Add glycerine Add melted butter Mix all this together very well till it’s combined well enough… Then start adding powdered sugar little by little until u get the soft desired consistency.. and knead well. Add icing sugar in between when it’s required while kneading Add Tylose powder (or) CMC powder at this point whilst kneading… In order to avoid stickyness u can use shortening ( or ) butter Knead well Your fondant is ready to be stored! U can divide into 3 big balls or required size and add color or store as it is the way u want.. Storage life. 5 months( Cling wrap- store it in airtight container) Room temperature. Subscribe for more recipes 😍 Chocolate cupcake recipe 3/4 cup (94g) all-purpose flour (spooned & leveled) 1/2 cup (41g) unsweetened natural cocoa powder 1 teaspoon espresso powder or instant espresso 3/4 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 2 large eggs, at room temperature 2tblspn curd 1/2 cup (100g) granulated sugar 1/2 cup (100g) packed light brown sugar 1/3 cup (80ml) vegetable or canola oil (or melted coconut oil) 2 teaspoons pure vanilla extract 1/2 cup (120ml) buttermilk, at room temperature ( you can add vinegar to curdle the milk) Chocolate frosting: Amul cream 170 Grams 30% or more fat Unsweetened cocoa powder 37 grams White granulated sugar 75 grams Butter 30 grams Method: In a saucepan add cream, Butter on low flame, let the butter melt in completely… then add in the sugar and cocoa powder And form it into a paste. Whisk with a rubber whisker until there is bubbles 🫧 above … keep it on low for 3 -4 minutes! Strain this into airtight bowl ! So there are no lumps. Let it sit for 1 n half n hour till it settles to room temperature! Use it for frosting/ filling of any cake you love. Dont forget to like, save share , follow and subscribe! :)

Bake @170* C for 30 minutes Soak it with (30 ml of hot water 1 tspn powdered sugar and 1/2 tspn coffee powder ) dilute/ mix it well. And then soak the cake. Layer 2 : 50 ml of whipping cream ( heavy with 30-35% of fat ) 1/2 tspn coffee powder 1/2 cup powdered sugar 40 grams of dark chocolate melted with 20 grams of unsalted butter ( room temperature) Sieve all dry ingredients in cream add in the melted chocolate ( keep this bowl in freezer for 15 minutes and whip until stiff peaks ) Layer 3: 50 ml of heavy cream 80 grams of dark chocolate 15 grams of unsalted/salted butter Melt this in double boiler / microwave in intervals. Let it set in fridge for 45 minutes! And layer this chocolate ganache Layer 4 : Melt any of your favorite Milk Chocolate ( Hershey’s/ Dairy Milk) Layer it Layer 5: Dust it with cocoa powder. Enjoy! Cadbury cocoa powder. * 50 grams dark chocolate chips melt with 20 grams of butter * 1 teaspoon baking powder * 1 teaspoon baking soda * 1 cup 200g granulated sugar * ½ cup 110g packed light brown sugar * ¾ teaspoon salt * 2 large eggs * ½ cup 120ml vegetable oil (I prefer sunflower oil) * ¾ cup 180ml sour cream * 1 tspn vanilla essence * 1 cup 240ml hot Brewing coffee Sieve and mix all dry ingredients and then add all the wet ingredients, at room temperature, and hot coffee Bake @170 degree C (preheat oven ) Chocolate Ganache Recipe 250 grams dark chocolate 100 grams Nutella 120 grams heavy cream 47 grams butter unsalted Melt butter, dark chocolate Nutella, add heavy cream and microwave in intervals and mix! Take available mould or kadai grease it with melted butter/ oil and dust it with all purpose flour and add the batter and give 2-3 taps so there is no air bubbles Preheat the kadai/ pot for 15 mins on low flame by adding salt on the base ( heavy bottom pan/ kadai) And carefully place the cake batter mould and bake on low flame for next 30 mins and later check with toothpick if it comes out clean The cake is ready. Let it cool down and cut them in thin layers with the help of knife and thread. Chocolate buttercream cream Recipe: Add 25 grams of unsalted butter And 1/4 cup of whipping cream 2tblspn powdered sugar 2tblspn of Nutella 1tspn coffee ( any brand ) Melted chocolate chips (25grams) optional Method: Just whisk them all together Make sure you don’t melt the butter and just whisk the block when it’s in room temperature. Chocolate Ganache Recipe: 100 grams of bitter chocolate melted 1tblspn powdered sugar 15 grams of unsalted butter Method: Melt them all Let it cool down a bit if it’s too hot And pour it over the cake and let it set for another 15 mins in fridge. Chocolate concoction: 20 grams of melted chocolate 1tspn coffee 1/4 cup hot water Method mix them while the water is hot And let it come to room temperature. ( keep layers of cake and add the concoction over so the cake is moist ! Add the buttercream over on each layer and repeat until the last layer of the cake. And let it set for 25 minutes in the fridge then take out and pour ganache and let it set in fridge for next 15-20 mins. Serve 😄♥️

Subscribe to my channel! :) Ingredients 1 1/2 cups self raising flour, sifted 1/3 cup cocoa, sifted 1/3 cup White Sugar 1 teaspoon vanilla essence 1 egg, lightly beaten 1/3 cup oil 1 cup low fat milk Icing Sugar to dust Method Lightly grease 2, 12 hole (2 tablespoon capacity) mini muffin trays. Preheat oven to 200°C conventional or 180°C fan forced. Combine flour, cocoa and White Sugar together in a medium bowl. Mix the vanilla, egg, oil and milk in a separate bowl. Gently pour the wet ingredients into the dry and lightly fold together until just combined. Over mixing will give tougher muffins. Divide mixture evenly between each cup of the mini muffin pans. Bake muffins for 15-17 minutes, or until they spring back when gently touched in the centre. Leave in tray for 5 minutes, then gently remove and cool on a wire rack. Dust with sifted Icing Sugar.
IMPORTANT: I have added the recipes for a 2 lb. chocolate fountain AND a 24 oz. chocolate fountain. Please refer to the recipe based on your size chocolate fountain. 2 lb. Chocolate Fountain 18 ounces semisweet chocolate chips 16.5 ounces milk chocolate chips 1.5 ounce bittersweet chocolate 1 1/4 cup cooking oil canola, vegetable, or other neutral tasting marshmallows strawberries pretzel sticks rice krispy treats OR 24 oz. Chocolate Fountain 12 ounces semisweet chocolate chips 11 ounces milk chocolate chips 1 ounce bittersweet chocolate 3/4 cup cooking oil marshmallows strawberries pretzel sticks rice krispy treats INSTRUCTIONS Melt the Chocolate - 3 Ways INSTANT POT METHOD Add a cup of water into the Instant Pot. Press the Saute button and set it to Less mode. When the water starts to simmer, place a metal bowl over the Instant Pot. Pour chocolate into it. Use a heat safe spatula to stir and melt the chocolate with one hand and while using the other hand to hold the bowl with an oven mitt. Stir until lumps dissolve. Slowly pour in the oil and stir until full combined. POT METHOD In a pot over a stove, pour in water until it's one or 2 inches deep inside the pot. Bring the water to a simmer. Next, put chocolate into a heat safe bowl. Make sure bowl is larger than the pot so that it can sit on top of the pot. Place bowl over the pot and let it sit on top of the pot. Grab an oven mitt and use one hand to hold the bowl. With the other hand, use a spatula or heat safe utensil to stir the melting chocolate. Stir until lumps dissolve. Slowly pour in the oil and stir until full combined. MICROWAVE METHOD In a heat safe bowl like glass or ceramic, place chocolate inside. Heat bowl of chocolate in the microwave 30 seconds at a time. Stir after each time. Keep heating and stirring until no lumps remain. Pour in oil and mix until fully combined. Set Up Chocolate Fountain Follow the video for visual instructions. Connect the corkscrew part to the base. Then place the tube over the base. Next, place the largest tier over the top of the tube until it stops at the locking point. Then place the second largest tier over the top of the tube until it stops at the locking point. For the smallest tier, turn it upside down so that the widest part faces up. Match the U shaped opening with the notch. Turn On Chocolate Fountain Plug in chocolate fountain. On the chocolate fountain, turn on the heat setting. Let it heat up for at least 2 minutes. Then pour the melted chocolate into the base of the fountain. Next, turn on the motor. Let the motor run for 2 minutes. Then turn off the motor for 30 seconds but leave the heat setting on. After 30 seconds, turn the motor back on. Level the Chocolate Fountain Let the chocolate fountain run for at least 5 minutes to let the chocolate flow adjust to the fountain. If one side is not flowing as well, lower the adjustment foot under that side. If the adjustment foot is at its lowest point, then try raising the other side. This process may take awhile. Also, if the chocolate seems too thick and doesn't flow like water, add 1/8 cup oil and let it run. If after a few minutes, it's still too thick, add another 1/8 oil again. The chocolate fountain should flow evenly with a continuous sheet of chocolate on all sides. Set Out Dipping Items Set out bowls of dipping items like strawberries, large marshmallows, pretzel sticks, and Rice Krispy treats. Use a skewer or toothpicks to handle dipping items.
RECIPE STEPS: For the dough • In a mixing bowl add maida, salt and water as required to make normal dough. The dough should be semi stiff. • Once done cover the dough with a cloth and allow it to rest for 15 minutes. For the filling • In a mixing bowl combine cabbage, onions and salt; mix and squeeze out the excess water. By transferring it on a cloth and then squeezing all the water in the bowl. • Discard the water and place the cabbage and onion mixture in the same bowl. • Add ginger, black pepper and oil, mix and set aside. For assembling the momos • After 15 minutes, divide the dough into smaller portions, with this recipe you can make 20 momos. Smoothed the portioned out dough between your palms. • Once done, using a rolling board and a rolling pin, start rolling the dough into 3-4 inches small round shape. • Once done, flip the rolled dough, sticky side up and place a tablespoon of the filling, in the center. • Start gathering the sides and edges, by bringing them closer to the center and start sealing it by pinching it in the center. This would be a round shape momo. Once done set it aside. • In a large deep pan, heat the oil and fry the momos over medium flame, until they are half cooked. Once done remove and place it on a kitchen towel. For making the marinade • In a large mixing bowl combine, sattu, salt, chat masala, kasoori methi, Kashmiri red chili, black salt, garam masala, lemon juise, red food color. Coriander leaves, ginger garlic paste and dahi. Give it a good mix until well combined. • Heat up the mustard oil in a small tadka pan and add the mustard oil to the marinade mixture, stir everything together. For making the tandoori momos - method 1 without the tandoor • Add the fried momos into the marinade and using your hands lightly start to coat the momos with the marinade. • Place as small piece of foil in the center of the bowl, place the hot charcoal in the center and then add ghee. • Cover the bowl quickly; this will give a very nice smoky tandoor flavor to the momos, without a tandoor. Remove the charcoal and the foil. Tandoori momos are ready to be cooked. • Preheat a pan over high heat; place the marinated tandoori momos in the hot pan along with 1 tsp of oil. Cook the momos for 30 second, tossing and turning them using a tong. Tandoori momos are ready. For making the tandoori momos - method 2 using tandoor / Grill rack • Start to skewer the marinated momos pieces on the steel / wooden skewers, piece by piece, just insert from one end and remove from the other end. Approximately 4 momos for long skewers and 2 for short skewers. • Over high heat place the grill, and then cook the momos over direct flame, for 1 minute or until you see small black spots. • Do not place the skewers on top of the grill just rotate it by holding it in your hand. If the momos do not rotate then use a fork to hold them steady and then cook it from all sides. Continue making the remaining momos. • Once all the momos are done, remove them in a mixing bowl. Add the sliced onion, coriander leaves, lemon juice and chat masala. • Toss all the momos until well coated. Tandoori Momos are ready. Serve • Serve the Tandoori Momos with some red chutney, mayonnaise, salad and lemon slices. RECIPE NOTES : Notes: Squeeze excess water from the cabbage cos the excess water can ruin the momos and make then soggy. Do not remove too much water cos this will make your momos dry from the inside. For this particular dish you have to fry the momos as we will be using skewers. For the first method of cooking you can use steamed momos if your wish. The serving salad is made with onions, cabbage and chat masala Tips: Please soak the wooden skewers for 30 minutes in water before using it. This will avoid them from burning.
