I have my grandmothers flip coffee pot. I have been using it the last couple of days. The trick is the flip. It can go very wrong if you’re not careful. It does work well. Hers is a vintage Ilsa brand. 👍👍
the most satisfying thing about using kalita wave filters is the ridges of the filter and the ridges of the origami are a perfectly matched! V60 would brew faster with all that open space for unfettered bypass, and wave filters just brews a different taste out of the coffee.
Origami is a great brewer. Throw a Chemex filter in for bigger batch brews or thrown the Origami in a Chemex so the filter doesn’t stick to the wall and get great draw down time. One of the most versatile brewers and great looking on a bar.

I love dark roasted espresso. If it tastes bitter...you didn't do it right. Got a wonderful southern-italian-style espresso in my grinder at the moment, incredible thick, sweet, syrup-ey and super-intense espresso. I don't like 3rd wave espresso, tastes like battery-acid to me. IMHO a dark roast is best when being crafted with a manual lever machine (I'm using the Flair Pro 2). Btw, I honestly disagree with what you say. Maybe you never had a great southern-italy style espresso. Because that's where its from, italy. Not Starbucks. And you need good coffee for a good dark-roasted espresso.
There are a few things left out from this video that are important to know: 1) Most people don't know this, but moka pots are disposable, so you should throw them out after one use. 2) Only use bottled mineral water, that's the type moka pots are meant to use, and anything else will ruin the flavor of your coffee. 3) Moka pots can be used as mugs, just open the lid and drink directly from the top. Aluminum is an excellent thermal insulator, so there's no risk of burning yourself while drinking from it.

That espresso is probably strong, so that cream helps cut it down, smooth out the bitter flavors and probably is sweetened as well.
