Andalusian Eggplant with Honey & Rosemary
I guess you could call this fusion since the eggplants are East Asian and the method is Spanish. However if you are using dark purple European eggplants, you should remove the skin first. Also don’t undercook them because they can be bitter when undercooked. Two of the twelve I made were a little bitter because they were thicker than the others. You can also leave out the honey. Just salt them nicely after cooking. Other than that, you’ll find these vegan treats freaking delicious.

This delicious side dish is a perfect accompaniment to autumn or holiday meals. It could easily be a vegetarian dish. Just replace the chicken stock with vegetable stock. One could also fry up some leeks instead of shallots for a topping. However, I don’t recommend replacing the mint. It’s part of what makes this purée so special.

An easy dish to make and share with a group. It only takes a bit of technique, meaning finishing it under the broiler for a few minutes. Not a problem. You just have to keep your eye on it. Anyway, plate it anyway you’d like. I did family style here, ie., putting it all on one platter. (I squeezed some lemon juice on the chicken while it was hot to give it an extra zing.)

I froze some of my harvested tomatoes previously and made a very nice marinara out of them by treating them as one would canned whole tomatoes (skin and seeds removed). Forget making a passata out of them unless you have a food mill. In any case, passata is not at all necessary for making a good marinara. I just use a potato masher on the pulp after the tomatoes have cooked down.
