These sections ruined the game for me. Maybe once or twice is acceptable but by the time you get to this part it's already annoying. I liked the game but this part definitely affected my experience.

Focus on turning one wheel instead of both. First, turn the wheel as much as you can before the Count gets near you and then run into the farthest room from that wheel. Wait for him to get inside then escape through the back to trap him inside. Now, go back to that first wheel and turn it all the way. By then, the Count will take longer to get to you. Now run like hell to the opened gate to make your escape.
