One day sourdough: It is totally possible to make sourdough in a day. I am starting at 6:30am because I have to have this bread in the oven by 3:00pm for a friend's dinner party, but you do not have to start this early. You can use peak starter, or even cold discard straight from the fridge, but l am using some starter that I fed the previous day and allowed it to rise and fall completely. It i...

Days 15-17 are getting exciting! We finally got our first rise after feedings! After our daily 25g starter/50g flour/50g water feeding and discarding the rest of the starter into the discard jar, the active starter doubled within a couple of hours on Day 15! Day 16 took a little longer to double but it is nice and bubbly. How cold you keep your home will also affect how long it takes to rise. T...

Day 14 has finally arrived and today we will save the discard for the first time! Your starter should be bubbling every day since about day 10 or so, even if you have not seen a rise yet, that is normal! We will continue with the feeding schedule as we have the last 2 weeks. 25g starter, 50g flour, 50g water. At this point I add a rubber band to mark the line where I mixed everything in, becaus...

Day 7-13 of sourdough starter is more of the same thing but the starter is starting to gain strength. Continuing the process of discarding and feeding is encouraging the good bacterial growth. The discard should still be thrown away at this point-it can still be unsafe to use. Just keep going! We are getting closer!

Day 4-6: The quiet discard days have begun! These next few days will be rather redundant and frankly boring. Your starter is just working on gaining strength and not a lot of visible activity will be noticed. Add 25G starter to new clean jar, add 50G flour and water and stir. This is the new starter. The leftover starter is now called discard. These early days of making a starter grows alot of ...

    Does the temp of the house make a difference? My house is around 70, but I use a proofing box and it's around 75-80 in the box.

    • @txsourdoughjess
      @txsourdoughjess 4 วันที่ผ่านมา

      It can. My house runs colder, around 67-68 and my dough is usually always 70° after my stretch and folds. I use a seedling mat to keep my dough at the temp I want it so it doesnt take 3 business days to rise. 😂

      Starter is super easy to maintain once it is established. And you can always buy some already established (just one time), and then store it in the fridge until bake time. I just published Episode 4 that talks about how to feed and maintain your starter.
