Making a cake at home in a pressure cooker or kadhai is a great way to enjoy homemade cake without an oven. Here is a simple recipe:
Ingredients:
All Purpose Flour - 2 Cup
Baking Powder - 2 TSP
Baking Soda - 1 TSP
Custard Powder- 2 TBSP
Refined Oil - 1 Cup
Sugar Powder- 1 Cup
Milk Powder - 1½ TBSP
Milk - 1½ Cup
Tutti Frutti
Instructions:
Step 1 - For cooking:
• Salt or sand (for lining the kadhai bottom or pressurecooker, about 1-2 cups)
• A stand or a small steel plate (to place inside the kadhai)
Setp 2 - Prepare the Cake Pan:
• Grease and flour a 6-inch cake pan or line it with parchment paper.
Step 3 - Prepare the cake batter
• In a mixing bowl, sift the all-purpose flour, baking powder, baking soda.
• In another bowl, mix Sugar Powder, milk, oil or melted butter, vanilla essence or custard Powder.
•Stir until sugar dissolves completely.
•Gradually fold the dry ingredients into the wet ingredients. Mix gently to avoid lumps. Do not overmix.
Step 4 - Bake in the Kadhai
•Place the cake pan on the stand inside the preheated kadhai.
•Cover the kadhai with a lid, ensuring it’s tightly closed to retain heat.
•Cook on low to medium heat for 30-45 minutes. Check after 30 minutes by inserting a toothpick or knife into the center of the cake. If it comes out clean, the cake is done.
Step 5 - If you are preparing in the Pressure Cooker:
•Remove the gasket (rubber ring) and whistle from the pressure cooker lid. This is important to avoid building pressure inside the cooker.
•Add about 1-2 inches of salt or sand to the bottom of the cooker. This will act as an insulator to prevent the cake from burning.
•Place a trivet or a small stand on top of the salt or sand layer.
Step 6: Cool and serve
•Remove the cake pan from the kadhai or pressure cooker and let it cool for 10-15 minutes.
•Carefully demold the cake, slice, and enjoy!
