to answer how Flat & Sharp were in Ocarina, there were two gravestones next to the one that leads you to the Sun Song. Those were their graves that marked them as royal composers & interacting with them would have their ghost models spawn as special skins for Poe enemies. Fun bit of extra flavor that could explain why you find a song in the grave you do.
