Hello, my name is Terry, and thank you for visiting my channel!
My goal is to share some of my family's recipes and also some new ones. I am not a professional chef but I have learned my skills "hands on ✋" by growing up in an Italian family surrounded by fantastic cooks - my grandmother, mother, and mother-in-law. My father was a baker and owned his own shop with my uncle, which in turn influenced my love of baking!

Applesauce Cake
This cake is easy to make , just have all your ingredients ready and measured and you can put this together fairly quickly. Enjoy it as is , with powdered sugar or make an icing. I added a mix of raisins .
If you don't like raisins just omit them or try cranberries , they would go great too!

Ingredients:
2 and 1/2 Cups Unbleached Flour
1 Teaspoon Baking Soda
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
2 Teaspoons Cinnamon
1 Teaspoon Pumpkin Spice
1/2 teaspoon Nutmeg
1/2 Cup Vegetable Oil
1 Tablespoon Vanilla Extract
2 Cups Organic Unsweetened Apple Sauce
2 Large Eggs
1/2 Cup Light Or Dark Brown Sugar
3/4 Cup Granulated Sugar
!/2 Cup Chopped Walnuts
1/2 Cup Raisins

These came out so amazingly delicious! It did take some preparation , I made them over several days. I first chopped the pecans and soaked them for 2 days . Then I combined the other ingredients and refrigerated the batter overnight. The next day I rolled them in confectioners sugar, shaped them and dipped them into the melted chocolate . It really wasn't very involved just a bit time consuming...

Why do so many stupid people think manicotti is made with shells?
This recipe lost me at canola oil. That oil is so bad for you.

Thanks for watching my video. It is delicious . It does take some time and practice rolling up the braciola so don’t get discouraged . Some people commented they didn’t like using the toothpick method so you may want to try using string instead. Happy cooking!
It's just me - can I halve the recipe (e.g., 1 c flour, 1 c buttermilk, etc.)?
Hi I’m sure you can easily halve the recipe if you would like . But if you have extra waffles just freeze them and when you want one just pop them in your toaster 😊 enjoy and have a nice day

We use the same ingredients in our family's recipe except instead of oregano, we would pick some fresh mint leaves and put them into the salad.

@@TheHandyPalate I made a vinegrette with red wine vinegar, olive oil, Dijon mustard, fresh parsley, burred the whole thing so it was relatively creamy. Then I topped the potatoes with small pieces of basil. Great summer dish.

Delicious of course - but can you do it without the sugar??? Seniors cannot eat these and maintain healthy blood glucose levels.
I have never made this cookie without sugar . There are sugar substitutes like Splenda that may work , they may even have a brown sugar alternative . You can half the recipe and experiment with the sugar substitute or try cutting back on the amount of sugar in the original recipe . Again I’ve never done this myself. I've been making these for many years. To make them a little easier, I use a Pampered Chef wooden tart tamper. It can probably be purchased through Amazon and may be called something different. I also sprinkle them with powdered sugar after baking.

Actually the original recipe from my mothers cookbook from the 70s has 1/2 cup of shortening vs the canola oil here. Excellent recipe though!
That’s interesting , so the original recipe only uses butter ?I only have my aunts recipe and that’s what I’ve been using all these years , guess she used the oil possibly to make it a bit more moist . Not one reason in the world to ever use garlic powder. It's the worst. Bitter and destroys any product. If you don't have fresh garlic, go with out.
My Sicilian mother in law used to make them with egg, I have seen loads of recipes for bracioli/involtini, this is the first time I have found the one I am familiar with

Yummy! My family always uses Romano instead of Parmigiano Reggiano cheese. We like the extra flavor of the sheep’s milk cheese. Thanks!

These cookies are great, I also recommend trying this recipe but with adding the jam prior to baking.

Adding 8 hard boiled eggs to my new years eve meatballs dish. My friends are going to freak, but it is so delicious. I first found out about this 14 years ago from a girl I was dating. Her family did this and I was hooked from egg one.

I made these and they just turn out softer than a store-bought brand of these cookies which I prefer a slightly crunchier texture in the middle. Did I do something wrong? I really want to try to clone that bakery cookie crunchiness. The only difference I see in ingredients is they may use ammonium bicarbonate instead of baking soda and unfortunately that's not sold by my local Walmart. UGH!!!! I will get this recipe straight!
Hello Sorry the cookies baked softer than you were hoping for. This is an old recipe from my husband’s aunt and she used baking powder in her recipe.. I myself have never used ammonium bicarbonate before . They do bake crispy on the outside and dryer inside but they shouldn’t be soft. I could suggest adding a bit more granulated sugar to the recipe or a bit less milk might help. Granulated sugar can make for a crispier cookie also bake them till they are nicely browned . @@TheHandyPalate Not your fault at all. I think this is the standard bake. I had to hunt to find the trick for more crispy styled and it required baker’s ammonia. Gonna be interesting!!! These are still good. Wife just likes the hard texture of the store bought ones. Company is from NJ, sells all kinds of Italian cookies. Cannot remember the name off hand.

My grandmother used to make these around the holidays when I was a kid especially on Christmas. We would go over to her house and the smell of the cookies baking were incredible. She was from Naples Italy and left us with the recipe she's no longer with us but it always reminds me of her and my youth when we make them.🍪

Question can i use challah dough?
I never have but I have seen other recipes using eggs in the dough and they look wonderful. It would not be a traditional Pletzel as the dough is suppose to be bialy like and the challah dough would have a different lighter texture .It would be delicious either way! Enjoy and have a nice day 😊

Seriously?😂 That looks dangerous. Tooth picks can soften enough while cooking and just come apart when the wood grain softens. I had to go to the hospital to have a piece of tooth pick removed that pierced the roof of my mouth. It's not likely to happen but use string and it can't.
I’m sorry to hear you were injured with a toothpick ! I’ve been using toothpicks for years and never had any issues with them softening or coming apart but by all means using butcher twine is commonly used as well . Yes I’m sorry I couldn’t go back and fix it afterwards. It calls for 3/4 cups light brown sugar and you can see the ingredients listed on my channel in the description.
