Mochi | The most soft, chewy dessert topping | 4K ASMR Recipe
I have been on a “Mochi” kick lately and have been craving the small round Mochi that are used for toppings on shaved ice, ice cream or it can even be eaten by itself. I tried a lot of the recipes online but they never turned out like I wanted, so I came up with a recipe that is quick & easy to make and you can even place the left over “uncooked” balls in the freezer to save and cook later. They are amazingly soft, chewy and melt in your mouth!
Makes (25) 1 tsp Balls

▬▬▬▬▬ Sugar Syrup Ingredients ▬▬▬▬▬
- 1 ½ Cup (354.88 ml) Water
- ¼ - ½ Cup (59.15 ml -118.3 ml) Granulated or Brown Sugar (This depends on how sweet you want the syrup. I use ¼ Cup Sugar in my mixture.)
▬▬▬▬▬ Directions ▬▬▬▬▬
1. Boil 1 ½ Cup Water in a sauce pan.
2. Once boiling, add Sugar to pan and mix until it’s melted. Turn off heat and occasionally stir.
▬▬▬▬▬ Mochi Ball Ingredients ▬▬▬▬▬
- 1 1/8 Cup (141 grams) Glutinous Rice Flour (Use the Mitake Shiratamako Flour OR the Shiratamako Ko Premium Glutinous Rice Flour. I used this because of the coarse texture in the flour. The fine Mochiko flour doesn’t work well. Be sure to find this type of flour as it makes a huge difference in the outcome.)
- ½ - ¾ (118.3 ml - 177.44 ml) Cup Boiling Water
▬▬▬▬▬ Directions ▬▬▬▬▬
1. Pour Glutinous Rice Flour into mixing bowl with a dough hook.
2. Boil ¾ Cup (177.44 ml) Water in the microwave for 2-3 minutes.
3. Pour ¼ Cup (59.15 ml) of the boiling Water over the flour and let it sit for 20 seconds.
4. Turn the mixer on low and slowly mix for about 1 minute. Use a spatula to scrape the sides and mix the water with the flour as much as possible.
5. Add another ¼ Cup (59.15 ml) of hot Water and mix again on medium speed for 2 minutes. Keep scraping the sides of the bowl to mix with the rest of the flour mixture and mix long enough for it to be one ball. If the mixture is still dry and not coming together, add a Tablespoon of your warm left over water at a time. Don’t put too much water or it will get too wet & will be too sticky and very difficult to handle.
6. Once your mixture is ready, add tin foil to a baking pan where you will place your mochi balls.
7. Use a “teaspoon” and another spoon or knife to scoop out the dough, (or you can make them any size) and place it on your baking pan and continue until all of your dough is gone, spacing the balls so they don’t stick together.
8. Work quickly to roll the dough between your hands to make small balls. I roll it for (25-30) times until the ball becomes nice and smooth. If you’re not working fast enough, the balls will get dry, but that’s ok. You can either cover them with saran wrap while you work or while you’re rolling the dough, it will turn soft again.
9. To cook, fill a small or medium sauce pan halfway with water and turn your stove on high to boil the water.
10. Once the water is boiling, add some of your Mochi balls on a spoon or spatula and gently place them in the water. (Be careful, you don’t want to splash hot water on you) Take a spoon and mix them around periodically, sometimes they stick to the bottom. It only takes 1-2 minutes to cook and you’ll know when they’re ready when they start rising to the top.
11. Only cook the Mochi balls you’ll be eating. To save Mochi balls for later, put your baking pan in the freezer with the balls for about 20 minutes and then remove them and place them in a plastic zip lock bag. You can take them out and cook them any time.
12. Once the Mochi Balls are floating on top of the water, scoop them with a slotted spoon and place them directly into your Sugar Syrup.
13. Let the Mochi Balls soak in the Syrup for at least 20 minutes.
14. Scoop your favorite ice cream into a bowl and place the Mochi Balls on top or eat them by themselves! They are sooooo good!!

      It is equal parts mixture of whole milk & heavy cream. You can purchase it in the store (typically used for coffee creamer) or you can make your own by mixing whole milk & heavy cream together. Hope this helps!

      Hi Jimmy! Instead of using half & half, try using heavy whipping cream which has a higher fat content & put the cream in first & then your other ingredients. Please let me know if that helps!

      Thanks for your question. I wouldn’t have it as a post work out drink due to the sugar content, but you can cut calories & sugar by substituting the syrups with sugar free options. 😀

      I would not recommend this as an everyday drink for somebody who is trying to lose weight. Syrup, soda, and half and half are not for losing weight lol. I would 100% NOT recommend this as a post workout drink. Your body needs good nutrients after a workout because that’s when it is most depleted. A protein shake or veg/fruit +ice smoothie would be a great post workout drink. This Italian soda could have substitutes to make it healthier, but overall is probably still not good for workouts 😅

      I have never tried it with oat or almond milk, but try it out & let me know. I wish I had other alternatives…the half & half makes it creamy & rich, but I completely understand about wanting something different, especially if you have allergies. Wish I could be of more help!

      It’s better to use Club soda, especially if you’re using the flavored syrups. Using Coca Cola will change the taste & using Sprite will make it sweeter. 😀

      Yes, for the sauce I used (1) Cup of Ice Cream, (1/2 Cup of Heavy Whipping Cream, (1) tsp Vanilla Extract & (2) tsp Lemon Juice. 😀

      For your lattes, I would omit the lemon juice from the recipe & it will last 4-5 days in the fridge. 😀

      In this recipe, Half & Half is a combination of 1.5 Tablespoons heavy cream & 1.5 Tablespoons whole milk. Grocery stores sell this in cartons so you don’t have to purchase both the milk & heavy cream products separately.
